Its been a while since I had curry breadfruit so I was eager to make this recipe. This amazing vegetarian curry dish uses simple ingredients to create layers of deliciousness. The usual aromatic suspects like onion, garlic, ginger and shadon beni are the foundation for our curry sauce but we take things to another level with carapulay (curry leaf) our homemade curry blend and a mixture of tamarind and jaggery.

EASY CHICKEN CURRY 2 tablespoons salted butter 2 tablespoons cooking oil 2 tablespoons minced garlic 1 large white onion, chopped 2 tablespoons curry powder 4 pieces bay leaves (laurel) 1 teaspoon turmeric powder 2 pcs cinnamon sticks (optional) 2 tablespoons fish sauce 1 kilo chicken breast fillet, cut into cubes 1/2 kilo potatoes, peeled and cut into cubes 1 can mushrooms 2 teaspoons white sugar 1 tablespoon vinegar 2 tablespoons salted butter (for mounting) Garnish with fresh herbs of your choice
