How To make Currant Bran Muffies
1 1/3 c All-Bran cereal
1 1/3 c Flour
1 t Baking powder
1/4 ts Baking soda
1/8 ts Salt
1/3 c Sugar
3/4 c Low-fat buttermilk
2 ea Large egg whites
2 tb Safflower oil
1 tb Molasses
1/2 c Currants
Combine cereal, flour, baking powder, baking soda, salt and sugar in 1- quart mixing bowl. Mix well. Add buttermilk, egg whites, safflower oil and molasses. Stir to combine (disregard any small lumps). Stir in currants. Chill, covered airtight, at least 4 hours to thicken. Drop 2 TBS thickened batter, 2 inches apart, onto greased baking sheets. Sprinkle with more cereal, if desired. Bake in center of 425-degree oven until tops have taken slight tinge and edges are very lightly browned, abou 8-9 minutes, rotating pans if browning irregularly. Do not overbake. Cool o racks. Makes 16 (3-inch) muffies.

Homemade Amish Bran Muffins Recipe
5 cups flour
5 tsp. baking soda
2 tsp. salt
2 tsp. allspice
3 cups sugar
4 eggs
1 cup oil
2 tsp. vanilla
4 cups (1 qt.) buttermilk
1 (20 ounce) box raisin bran flakes
Mix all of the ingredients together. The batter will be lumpy. Fill muffin cups 2/3 full or tin and bake at 375° for 20 minutes. The batter can be kept refrigerated for up to 6 weeks. Because these muffins include cereal as an ingredient, you should buy cereal on sale, use coupons or buy generic brands to keep it inexpensive.
I included this recipe because it keeps in the refrigerator a long time so it is great if you are short on time.
Makes 30-35 muffins.

Healthy Protein Oat Bran Pumpkin Breakfast Muffins | Tiger Fitness
Nutritionals Per Muffin:
Protein - 6g
Carbs - 14g
Fat - 2g
Instructions:
Preheat oven to 350F
You will need 2 mixing bowls
In one bowl mix:
3/4 cup pure pumpkin
1 tbs melted coconut oil
1 egg white - 46g
1 cup cashew milk unsweetened
1 tbs vanilla extract
1/4 cup sugar free syrup
dash of ginger
In separate bowl mix:
1.5 scoops MTS Whey
1 cup oat bran
1/2 cup flour
1/4 tsp baking powder
dash of salt
dash of cinnamon
dash of pumpkin pie spice
Add wet ingredients to dry and mix together
Add 1 tbs mini chocolate chips to batter and stir in
Place batter into muffin pan
Add evenly 1 tbs mini chocolate chips to the tops of the muffins
Bake at 350F for 15-20 min

Muffins are addictive, here’s a muffin dish that is extremely healthy and yet delicious!
OATS AND NUTS MUFFINS - Recipe
Ingredients
½ cup rolled oats
¼ cup roasted and chopped walnuts
¼ cup roasted and chopped almonds
2 tablespoons black currants
1¼ cups butter
1 cup castor sugar
3 eggs
A few drops of vanilla essence
¾ cup refined flour (maida)
½ teaspoon baking powder
Method
1. Preheat the oven to 180º C.
2. Put butter and sugar in a large bowl and beat with an electric beater, till light and fluffy. Break eggs, one by one, into the bowl and continue to beat.
3. Add vanilla essence and mix well. Sift refined flour with baking powder into the butter-sugar-egg mixture. Add rolled oats, walnuts, almonds and black currants and fold in with light hands.
4. Pour the batter into muffin moulds and bake in the preheated oven for twenty five to thirty minutes.
5. Allow to cool, remove from the moulds and serve.

Healthy, juicy and delicious. It’s all about bran muffins with black currants. This recipe is perfect for people who has a sweet tooth but want to stay feet.
Ingredients:
450 g flour
4 eggs
250 ml corn oil
120 g brown sugar
25 g baking powder
300 g corn bran
450 ml cold water
250 g black currant (fresh of frozen)
Preparation:
In the large bowl beat the eggs, add sugar, pour in corn oil and whisk until smooth.
Soak corn bran in cold water and leave for a few minutes.
Sift the flour with the baking powder.
Combine the flour and egg mixture, stir thoroughly. Then add the bran, carefully stir the dough until smooth.
Add black currants (fresh or frozen) and combine all together.
Scoop the batter into the prepared pan, dividing evenly between the wells.
Bake in a preheated to 190o C for 20 minutes.
Garnish your muffins with whipped cream or cream-cheese if desired.
