Ingredients
Birria de Res/ Beef Ingredients
7—8 Cups of Hot Water
4-Pounds of Chuck Roast (Diezmillo en troso or Chuck Steak)
1-Large Onion or 2-Medium
1-Whole Garlic
10-Medium Bay Leaves
8-Carrots ( add half the carrots first. This will help enhance the broth flavor.
8-Guajillo Chiles or California/ New Mexico Or 1/4 Cup views chili powder
3- Tablespoons Chicken Boullion
1/2 Tablespoon Oregano
1-Teaspoon of Salt (adjust to taste)
Views Birria Chili Oil - (6:25)
Grind all the dry spices in your grinder of choice
4-Guajillo Chiles + 1 extra for infusing
2-Bay leaves
1/2- Tablespoon Oregano
1/2-Tablespoon Chicken Bouillon
1/2-Teaspoon Pepper Corn or 1/2-Teaspoon Black Pepper
1/4- Teaspoon Ground Clove or 2-Cloves
1/2-Teaspoon Granulated Garlic Powder
1/4-Teaspoon Sugar
1-Cup Canola or Vegetable Oil
For Spicy oil add
10- Chiltepines or 1/2- Teaspoon Cayenne Pepper
4-Puya Chiles
Toppings
1/2- Chopped White Onion
1/2-Bunch Chopped Cilantro
1/4-Finely Chopped Green Cabbage
Lemon or lime to taste
Birria Tacos Ingredients
1-Cup Mozzarella or your favorite melting cheese such as Munster and Oaxaca

No need to brown the roast first...although, you definitely can for an added depth of flavor! But, we skip this step...and it comes out full of flavor!
The video shows how to make it in the Crock pot slow-cooker, but it can also be made in the Instant Pot or Stove-top (instructions on food blog).

RECIPE:
INGREDIENTS:
18 large eggs
1 cup milk
1 tsp. salt
1/2 tsp. black pepper
1 lb. sausage cooked and crumbled (we use Jimmy Dean)
10 slices bacon cooked and crumbled
1 orange bell pepper diced
1 yellow bell pepper diced
1 red bell pepper diced
1 small sweet yellow onion diced
2 cups cheddar jack cheese shredded (an 8-ounce bag)
For Serving
flour tortillas
Toppings such as more cheese, sour cream, avocado, salsa, and hot sauce. Chopped jalapeno is great for those who like spice.
SLOW COOKER SIZE: 6 quart or larger
INSTRUCTIONS:
In a large mixing bowl add the eggs, milk, salt, and pepper. Whisk until everything is combined.
Spray crock pot generoursly with non-stick cooking spray. Add the egg mixture, bacon and sausage to the slow cooker.
Add the bell peppers and onion and cheese. Stir.
Cook on HIGH for 3 hours stirring every 30 minutes to one hour to get a scrambled effect.
Warm the tortillas in the oven (wrapped in foil) or brown each one in a dry skillet on the stove top. Serve burritos buffet style along with toppings.

These Slow Cooker Vegetarian Burritos are made with just 6 ingredients and 5 minutes prep! Lots of add in options, or make a burrito bowl! (MORE BELOW)
INGREDIENTS:
1 cup canned black beans drained and rinsed
1 cup canned sweet corn drained
1 1/2 cups water
3/4 cup long grain white rice *rinsed
1 cup jarred tomato salsa mild or spicy depending on your tastes
3/4 teaspoon chili powder or taco seasoning
1/4 teaspoon salt
4 large flour tortillas
TOPPINGS: shredded cheese, additional salsa, sour cream, cilantro for serving as desired
INSTRUCTIONS:
In a 2.5-4 quart slow cooker, add beans, corn, water, rice (rinse well first!), salsa, chili powder and salt. Stir to combine.
Cook on low for 2 hours or just until rice is tender.
Serve in flour tortillas with additional toppings as desired.
