????Crockpot Loaded Potato Soup Recipe:
-1 (2lb) Bag of diced Hashbrowns
-8oz Cream Cheese, softened
-1 can Cream of Chicken Soup-32oz (4 cups) Chicken Broth
-1/2 packet of Ranch Seasoning, i use 2 Tbsps.
-half of a 3oz bag of Real Bacon Pieces
-4 oz (1 cup) Shredded Fiesta Blend Cheese
***To the crockpot add Hashbrowns, Cream Cheese, Cream of Chicken Soup, Chicken Broth and Ranch Seasoning. Cover and cook on HIGH for 3 hours. Add the Bacon Pieces and Cheese, then stir. Put the lid back on and let continue to cook until the cheese is melted.
????Crockpot Creamy Chicken Taco Soup Recipe:
-1 1/2lbs. Boneless, Skinless Chicken
-1 (10oz.) Red Enchilada Sauce (you could sub for tomato sauce to reduce sodium)
-1 Pinto Beans, rinsed and drained
-1 can Chili Beans, undrained
-1 can southwest corn, drained
-1 can Rotel, undrained
-1 packet Taco Seasoning (you can use less sodium)
-1 packet Ranch Seasoning
-1 packet Fajita Seasoning (you can omit if you want)
-2 1/2 Cups Chicken Broth ( you can use low sodium OR just water)
-8 oz Cream Cheese
***Add everything to a large crockpot and set to cook on LOW for 6 hours, or until Chicken is cooked through. When chicken is done, remove from crockpot, shred, then add back into the soup. Serve topped with sour cream and shredded cheese. ENJOY!
NOTES: If you'd like a thicker soup, you could reduce the broth to 1 Cup OR you can completely omit; But, if you reduce/omit I suggest also omitting 1 seasoning packet to cut down on sodium.

DUMPLINGS $4.45
1 can of carrots drained .55
2 stalks of celery chopped .99
1 chopped onion .73
2 cans of biscuits cut into 6ths 1.09 x 2
6-8 cups of chicken broth
1/4 cup of melted butter
salt & pepper
1/2 tsp garlic powder
1/2 tsp onion powder
-combine all ingredients into the crockpot except one can of biscuits. cook on low 8 hours. when time is up, add in the 2nd can of biscuits, close the lid and cook on high. allow the biscuits to cook for about 1 hour. the biscuits will cook at the top of the pot. Stir when the biscuits have become golden brown and serve with saltine crackers or cornbread.
CABBAGE SOUP $6.72
1 cabbage chopped 1.89
1 can of carrots .55
1 onion chopped .73
3 small red potatoes .55
1/2 a celery package .50
1 sausage link chopped 2.50
2 tbsp minced garlic
2 tbsp of powdered chicken broth
6-8 cups of water
salt and pepper
1/2 tsp of thyme
1/2 tsp of oregano
-cook all day on low 8 hours. serve with saltines or cornbread.
POTATO SOUP
1 chopped onion .73
1/2 a 5 pound bag of russet potatoes (peel & chop them) 2.19
1 cup of heavy cream 1.39
sour cream .65
1/4 cup of butter
2 tbsp minced garlic
salt & pepper
1 tsp chili powder
4 cups chicken broth
2 cups of milk
- mix altogether in crockpot and cook on high 8 hours(this will make sure potatoes cook well. When done cooking, take a potato masher and mashed some of the potatoes to make the soup a little less chunky. top with sour cream & cheese and bacon (optional).
VEGETABLE TORTELLINI $5.18
1 can of rotel .55
1 zucchini chopped .69
1 can of drained carrots .55
5 oz of frozen spinach 1.09
1 container of sour cream .65
1 package of tortellini 1.65
4 cups of water
3 chicken boullion cubes
salt and pepper
1/2 tsp thyme
1/2 tsp red pepper flakes
1/2 tsp parlsey
1/2 tsp onion powder
1/2 tsp garlic powder
combine all of the ingredients in the crockpot except tortellini and sour cream. cook on low 4 hours. when done, stir in sour cream and tortellini. stir frequently to prevent clumps in sour cream. eat when tortellini is cooked all the way through and enjoy.
BROCCOLI CHEESE $5.47
2 cups of heavy cream 1.39
2 bags of frozen broccoli .95 x 2
2 cups of shredded cheese 2.18
4 cups of water and 2 tbsp of chicken boullion powder
2 tbsp of minced garlic
-add all ingredients in the crockpot except for 1 bag of broccoli. mix well and cook on high 4 hours. make sure to stir frequently so that the cheese melts, does not become clumpy and the milk does not burn. If you need to make the soup thinner add milk, add flour to thicken. if needed, take an immersion blender to smooth the soup. Add in the 2nd package of broccoli, place the lid on and let it cook on low for another 30 minutes. serve when broccoli is cooked and top with more cheese!

This is a simple, but delicious, recipe for Loaded Potato Soup in your Crock Pot or Slow Cooker. Trust me when I say it's the Best Ever!!! You can thank me after you try it!!!

Crock Pot Potato Soup Recipe
10 slices cooked bacon, diced (reserve 2 slices for garnish)
4 cups chicken broth
2 1/2 pounds Yukon gold potatoes, peeled and cubed
1 medium onion, diced
1 tablespoon dried parsley
5 garlic cloves, minced
4 tablespoons unsalted butter
1/3 cup all-purpose flour
16 oz heavy cream, half & half, or whole milk
2 cups shredded sharp cheddar cheese
1/2 cup sour cream
Salt and pepper to taste
Garnish: Sour Cream, Chives, Shredded Cheddar Cheese, Bacon
Add diced potatoes, diced onion, minced garlic, bacon, parsley and chicken broth to the slow cooker. Season with salt and pepper. Stir and cook for 6-8 hours on low or on high for 3-4 hours, until the potatoes are fork tender.
Once the soup has cooked, add butter to a medium saucepan over medium heat and melt. Whisk in the flour until completely combined and gradually add in the heavy cream, milk, or half & half. Whisk the flour mixture until smooth. With the heat on the lowest stove setting, let the mixture cook until it starts to simmer and is getting thicker, stir occasionally.
Immediately add the milk-flour mixture to the slow cooker and stir to combine.
Using a potato masher, mash about 3/4 of the potatoes.
Stir in the shredded cheddar cheese and sour cream. Stir well, until fully combined and creamy. Taste for seasoning, add salt and pepper to taste. Continue cooking the soup on low for 30 minutes or on high for 15 minutes. Enjoy!!!

EASY FALL CROCKPOT SOUPS // CHEAP & EASY FAMILY MEALS // MANDY IN THE MAKING
Fall was a little lat arriving around these here parts, but it is HERE for SURE now, and these cozy soups I made in the crockpot last week sure hit the spot! These came together quickly, and made for some easy weeknight dinners for my family. Beer Cheese Potato Soup with Sausage:
1lb Italian sausage
4-6 small to medium russet potatoes, peeled and chopped
2 carrots, peeled and chopped
1 celery stalk, peeled and chopped
1/2 onion, peeled and chopped
2-3 garlic cloves, minced
2 1/2 cups chicken broth
12oz beer
1 1/2 cups half & half
2 cups cheddar cheese
Salt & Pepper to taste
Meagan's Corn Chowder:
3 cans creamed corn
1-2 cups chopped potatoes
1-2 carrots, chopped
1 celery stalk, chopped
4 TBSP butter
2-3 cups chicken broth
1 cup half & half
salt & pepper to taste
optional: 1/4cup flour shaken with half and half before adding
Meatball Ravioli Soup:
1 bag frozen fully cooked meatballs
1 jar prepared pasta sauce
1 can tomatoes
1/2 onion, chopped
2 carrots, chopped
1 celery stalk, chopped
minced garlic
2 1/2 cups chicken broth
dash red pepper flake
8 oz dried ravioli, or pasta
optional: parmesan rind
