How To make Crock Pot Lentil Curry

basmati rice, or regular, cooked
Directions:
Put all ingredients into the crockpot. Stir well to mix thoroughly. Cover and cook on low for about 8 hours. Serve with the rice.

INGREDIENTS:
- 1 Tsp Olive Oil
- 1 large Bay Leaf dried
- 1 medium-sized Onion finely chopped
- 5 cloves Garlic minced
- 2 medium-sized Tomatoes chopped (or 1 can of diced tomatoes)
- ½ cup Brown Lentil uncooked
- 1 Tsp Salt & Pepper adjust as per taste
- 1 Tsp Turmeric
- 1 Tsp Ground Cumin
- 1 Tsp Ground Cinnamon
- 1 Tbsp Smoked Paprika
- 1 Tsp Garam Masala optional
- 1 Tsp Curry Powder
- 2 cups Vegetable Broth low sodium
- 1 cup Coconut Milk
- Chopped Cilantro / Coriander for garnish
METHOD:
1) Pour Oil into the Slow Cooker. Now, throw in the Bay Leaf, followed by all the veggies and the Lentils. Pour in the Vegetable Broth. Throw all the ground spices. Stir with a spatula until combined. Cover with a lid and slow cook for 4 hours on high or 8 hours on low.
2) Now, open the lid. Use a spatula to check if the Lentils are cooked. If they smash when pressed, then they are cooked and ready for the next step. Pour the Coconut milk. Stir until combined. Garnish with some chopped Cilantro. Cover with the lid and slow cook for another 1 hour on High or 2 hours on Low.
3) Serve hot with rice.
Other Possible Substitutions & Alterations You can cook this Vegan Lentil Coconut Curry in the Instant pot as well. Just dump all the ingredients except coconut milk and pressure cook on high for 3 minutes. Allow the pressure to release naturally. Next, stir in the Coconut Milk. Stir in chopped Cilantro and put on the lid until you serve. You can make this Vegan Lentil Coconut Curry on the stovetop as well. For that, dump everything in a big dutch oven and cook on medium-low heat for 25-30 minutes. Stir to check if the Lentils are cooked. If they are cooked, stir in the Coconut Milk and Chopped Cilantro and serve. (if using Red Lentil cook for 15 min) You can skip Bell Peppers if you want to. I have left out Sweet Potatoes and Carrots to make this Low Carb. However to make this a meal, include those as well. You might want to check the seasonings before you serve. If you are using Red or Green Lentil cook for 2.5 hours on High or 5 hours on Low. Red Lentils cooks extremely fast. How to make Vegan Lentil Coconut Curry Ahead of Time? You can make this Vegan Lentil Coconut Curry and store this in an air-tight container in the refrigerator for 1 week or store it in the freezer for 2 weeks. Thaw it overnight in the refrigerator and reheat it in the oven before you serve.

This is a combination of a few cultural inspirations that I've thrown together into something my family loves to eat, especially when making it with some homemade naan.

Easy Red Lentil Coconut Curry (Crock Pot Recipe)
A delicious, protein-packed, plant-based curry that's as easy to make as it is tasty. Bursting with lentils, this crock pot recipe requires no expensive or complicated spices.
Recipe & Storage Tips:

1 tablespoon olive oil
1 ½ cups chopped onion, small dice
4 garlic cloves, minced
1 Indian Dal spice packet from Zen of Slow Cooking
½ teaspoon sea salt
2 tablespoons tomato paste
1 cup red lentils, washed & picked over
2 cups vegetable broth
1 (13.5 ounce) can coconut milk
????️ INSTRUCTIONS ????️
Add 1 tablespoon olive oil to your crock pot. Turn the heat to medium-high. Once the oil has warmed, add 1 ½ cups chopped onion and 4 cloves of garlic. Cook for about 5 minutes until the onion being to sweat and the mixture becomes aromatic.
How to store onions: Never put them in the refrigerator. They prefer a dry place with decent air flow.
Add 1 packed of Indian Dal from Zen of Slow Cooking, ½ teaspoons sea salt, 2 tablespoon tomato paste, 1 cup lentils, 2 cups vegetable broth, and 1 can of coconut milk. Mix to combine.
How to store garlic: Once you open a bulb of garlic, unused cloves begin to lose their freshness. You can peel them all and keep them in vinegar in the fridge for months.
Cover and cook on low for 6 hours.
