A simple jalapeño popper recipe
INGREDIENTS:
- jalapeños
- cream cheese (I used Philadelphia)
- your favourite BBQ rub (I used @bbq__queen which has a perfect balance of sweet and heat)
- streaky bacon
- @blendsmokedhoney for drizzling over at the end
- cheese kransky chipolatas

METHOD:
- place enough lit charcoal into your cooker so you can reach 400-450F (I used 3/4 of a chimney worth of @firebrandbbq lump charcoal in the @tb2bbqsmokers Kettle Kone)
- slice jalapeños in half and scoop out seeds (save for a hot dish later on)
- slice kranskys in half
- fill jalapeños with cream cheese
- sprinkle your BBQ rub over the top
- place kransky on top of cheese cheese
- wrap popper with streaky bacon and pop a toothpick through the middle to aid its integrity and makes it easy to pick up once it’s cooked.
- place a chunk of fruit wood over charcoal to provide a mild smoke infusion (I utilised @bradkingsfirewood)
- place on grill indirect from heat source and cook for approx 30 mins or until bacon crisps up
- lastly, drizzle @blendsmokedhoney over the poppers to provide a sweet and salty flavour profile
- these were cooked on my @weberbbqausnz Kettle

Spicy Bacon Jalapeno Mac 'n Cheese Recipe | Eat the Trend
Wipe off the drool and get to making this dish already! It's a super loaded, tasty, and decadent mac 'n cheese topped with the king of all spicy snacking - flamin' hot Cheetos. Trust us, this is one dish you're going to love.
Spicy Bacon Jalapeño Mac 'n Cheese

8 ounces elbow macaroni pasta, cooked
1 pound bacon
2 jalapeños, seeded and diced
1/3 cup flour
2 cups milk
1 cup pepper jack cheese, shredded
2 cups cheddar cheese, shredded
1 teaspoon salt
1 teaspoon black pepper
1/4 cup green onions, diced
1 cup Flamin' Hot Cheetos®, crushed
Preheat oven to 400ºF.
Bring 3 quarts of salted water to a boil in a stockpot. Cook elbow macaroni pasta for 6 to 8 minutes, or until al dente. Remove from heat, drain pasta, and set aside.
In a large dishwasher safe sauté pan cook bacon until crispy and all of the fat has been rendered. Remove bacon from pan and place on paper-towel lined plates to drain and once cool, crumble. Remove about half of the rendered fat from the pan.
Add jalapeños and cook for 2 to 3 minutes. Whisk in flour and cook for an additional 2 minutes, or until the flour and fat are combined. Whisk in milk and bring the mixture to a simmer. Add in cheese, salt, pepper, and green onions. Continue cooking until cheese has melted. Remove from heat and add crumbled bacon, and macaroni. Mix to coat.
Pour macaroni and cheese into a medium sized casserole dish and top with crushed Flamin' hot cheetos. Cook in the oven for 5 minutes and serve warm.
