How To make Crillo De Pollo
2 large Onions
coarsely chopped
3 1/2 Chicken :
cut into serving
breast cut into 4 pieces 1 teaspoon Salt
1/2 teaspoon Pepper
4 Garlic cloves :
minced
1/2 teaspoon Dried thyme leaves crushed
2 Bay leaves
8 cups Chicken stock
3 large Russet potatoes, peeled :
cut into chunks
6 Carrots -- cut into 2-inch
3 ct Of corn -- cut into 3-inch
1 Egg yolk -- beaten
1/2 cup Cream
2 teaspoons Arrowroot (optional)
2 tablespoons Minced parsley
1 tablespoon Minced cilantro
This chicken and vegetable soup is an Argentinean classic. It is as thick as a stew and as creamy as a bisque.
Preheat oven to 400F.
Spread half of the onions in a large, deep baking dish. Place chicken on top. Season with salt and pepper. Sprinkle garlic, thyme and bay leaves over chicken. Spread remaining onions on top; drizzle with 1 cup stock. Roast uncovered for 30 minutes, or until chicken turns golden around the edges.
Place chicken (remove skin, if desired), onions, garlic and herbs in a 6-quart soup pot. Deglaze roasting pan with some water or stock and add to the pot. Add the remaining stock and the potatoes to the pot.
Simmer for 15 minutes, then add the carrots and corn. Simmer for 25 minutes.
Using a wide fork, roughly mash at least 4 of the "falling apart" potato chunks to help thicken the soup.
Beat egg yolk into the cream, then beat in 1/2 cup of the stock from the soup pot. Blend in the arrowroot if you want a thicker soup. Pour the cream mixture back into the soup, stirring until well-blended.
Just before serving, add the minced parsley and cilantro. Ladle into wide, deep soup bowls. Make sure each bowl has a chunk of potato, a piece of chicken, a couple of carrots and a piece of corn.
Serves 6.
PER SERVING (skin removed): 445 calories, 31 g protein, 52 g carbohydrate, 14 g fat (6 g saturated), 123 mg cholesterol, 463 mg sodium, 7 g fiber.

◼️ 1 cucharada de pasta de ajo
◼️ 3 cucharadas de sillao o salsa de soya
◼️ 1 cucharita de pimienta negra molida al gusto
◼️ 1 cucharita de comino molido o al gusto
◼️ Sal al gusto
Tallarines:
◼️ 500 gr de espagueti
◼️ 4 cucharadas de aceite vegetal

Pollo Guisado (Puerto Rican Style Chicken Stew)
Ingredients
chicken
oil
adobo to taste
onion powder to taste
oregano small amount
Sazon packet
salt to taste
black pepper to taste
sofrito 2-3 tbsp (See below for recipe) Or purchase at your local grocery
garlic paste
lime
cilantro
potatoes
carrots
bell peppers
tomato sauce
1 cup water
Salad Recipe
baby spinach
Roma tomatoes olive or avocado oil
salt to taste
pepper to taste
Add your favorite vinaigrette or salad dressing
Sofrito Recipe
2 medium Spanish onions, cut into large chunks (about 2 cups)
4 cubanelle peppers, stemmed, seeded, and cut into large chunks (about 2 cups)
1 large red bell pepper, cored, seeded, and roughly chopped (about 1 1/2 cups)
1 large bunch of cilantro, washed and roughly chopped (about 1 1/2 cups)
18 medium cloves garlic, peeled
8 ajices dulces, stemmed (small, brightly colored pods that look very much like habanero peppers, without the habanero heat.
4 leaves of cilantro
Note: If you can't find ajices dulces, you can omit them. If you can't find culantro, substitute additional cilantro.
Place onions and cubanelle peppers into the food processor fitted with a steel blade. Pulse until coarsely chopped.
With the motor running, add the remaining ingredients one at a time through the feed tube and process until smooth. Transfer to container and store in the refrigerator for up to three days, or freeze.
Directions
Drizzle oil onto the chicken.
Season with adobo, onion powder, oregano, Sazon, salt, black pepper, garlic paste, sofrito, lime juice, or vinegar. And massage the seasoning into the chicken.
Add a small drizzle of oil to a pot.
Add the chicken and brown it on all sides.
Add tomato sauce. Add the bell peppers and stir.
Add 1 cup of water to the bowl and pour it onto the chicken.
Add cilantro and combine. Cover the pot for about 20 minutes. Add the potatoes and carrots stir, add a small amount of additional water only if necessary and cook for an additional 20 minutes. Until chicken is tender, and potatoes are fork-tender.
Serve with rice, plantain, beans, and salad.
