1 cup all-purpose flour
1/2 cup plus 2 tablespoons water
1/2 cup milk
3 large eggs
2 tablespoons unsalted butter

In a blender or food processor blend flour, 1/2 cup plus 2 tablespoons water, m ilk, eggs, butter, and salt for 5 seconds. Turn the motor off and scrape sides down, with a rubber spatula. Transfer the batter into a bowl and let it stand, covered, for 1 hour. The batter may be made up to one day in advance.
Heat a 7 to 8-inch crepe or non-stick skillet over moderate heat until it is ho t but not smoking and remove from heat. Brush the pan as necessary with butter. Stir the batter, half fill a 1/4 cup measure with it, and pour the batter into the pan. Tilt and rotate the pan quickly to cover the bottom with a thin layer of batter and return any excess batter to the bowl. Return the pan to the heat , loosen the edge of the crepe with a spatula, and cook the crepe until the und er side is browned lightly. Turn the crepe, brown the other side lightly and tr ansfer to a plate. Crepes can be made in advance, stacked, wrapped in plastic a nd stored refrigerated for 3 days or frozen.

Hey, friends! Today, I'm sharing the perfect French crepe recipe that's an absolute must-try. In a bowl, combine 8 ounces (230 grams) of all-purpose flour with 3 tablespoons of sugar, a pinch of salt, and 1 teaspoon of baking powder. Make a well in the flour and crack 3 eggs into it - whisk gently. Gradually add 17 fluid ounces (500 ml) of warm milk while whisking until it forms a smooth, thick batter. Remember, reserve some milk for later! Melt 1.5 ounces (50 grams) of butter and add it to the batter along with 1/4 teaspoon of vanillin and 1 tablespoon of lemon juice for that extra kick. If you don't have vanillin, 2 teaspoons of liquid vanilla extract work just as well. Once mixed, pour in the remaining milk and whisk till smooth. Heat a non-stick or ceramic-coated pan over high heat, add a thin layer of batter, and cook until golden brown on both sides. Don't pour too much batter! These turn out thin and flawless. Ingredients
2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons melted butter
Butter, for coating the pan
Directions
In a blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for 1 hour. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours.
Heat a small non-stick pan. Add butter to coat. Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. After they have cooled you can stack them and store in sealable plastic bags in the refrigerator for several days or in the freezer for up to two months. When using frozen crepes, thaw on a rack before gently peeling apart.
Cook’s Note
*Savory Variation Add 1/4 teaspoon salt and 1/4 cup chopped fresh herbs, spinach or sun-dried tomatoes to the egg mixture.
*Sweet Variation Add 21/2 tablespoons sugar, 1 teaspoon vanilla extract and 2 tablespoons of your favorite liqueur to the egg mixture.
