How To make Basic Crepe Recipe
1 1/2 c Flour
1 ts Sugar
1/8 ts Salt
3 Eggs
1 1/2 c Milk
2 tb Butter or oil; melted/cooled
Mixing crepes by hand. Sift the dry ingredients into a bowl. Break the eggs into another bowl and mix until yolks and whites are blended. Make a hole in the middle of the dry ingredients and pour in beaten eggs. (French chefs often break the eggs right into the dry ingredients but this makes mixing more difficult. Stir the flour mixture into the eggs little by little. The dough will be difficult to work and it may be necessary to add a little milk (or whatever liquid is used in the particular recipe) to incorporate all the flour. Add the liquid a spoonful at a time and mix it in thoroughly before adding more liquid. When the mixture becomes easy to work (when about half of the liquid has been used) the remainder can be added in two portions. Add melted butter (and flavorings if indicated). Mix again, cover and set aside for at least an hour but not more than 6 hours at room temperature. Crepe batter can be held overnight in the refrigerater. If necessary, the crepe batter can be cooked immediately, but the "resting" time allows the flour to absorb more liquids, makes the mabber easier to handle, and gives the crepes more flavor. Since flours vary in their ability to absorb liquid, if the crepe batter seems too thick when you are ready to cook it, a small amount of extra liquid can be added at this time. Ingredients for making basic easy crepe recipe:
1 cup (120g) Pastry flour
1 tbsp (10g) sugar
1/4 tsp (2g) Salt
3/4 cup (200ml) milk
2 eggs
Instructions for making thin crepes:
- Start by sifting pastry flour into a large bowl
- Sifting the flour helps to get rid of lumps in the batter so your crepes come out beautifully smooth
- Next add 1 tbsp of sugar and 1/4 tsp of salt to the flour and whisk to combine
- Now it’s time to add the wet ingredients starting with milk, we used whole milk but pretty much any kind of milk will work, followed by 2 whole eggs
- Give the batter a really good whisk
- This isn’t like pancake batter where you want to leave lumps, for the ideal crepe batter you need it super super smooth so to ensure there are absolutely no lumps, strain the batter through a sieve and use a spatula to push it through
- Now you’re ready to start cooking
- Melt some butter in a non-stick or cast iron pan over medium heat
- Use a ladle to scoop a portion of batter into the pan then gently swirl the pan so the batter spreads out evenly across the surface
- Cook for about 1 minute then use a spatula the gently flip the crepe and cook for about another minute
- This recipe will make about 8-10 crepes of this size
- You’re now ready to add any filling you like, we stuck with classic Nutella but fruit or jam would be amazing as well
