How To make Creole Mushrooms
1/4 c Red wine
2 Garlic cloves, minced
1 ts Oregano
1 md Onion, diced
1 Green bell pepper, diced
1 Jalapeno pepper, chopped
1 md Tomato, diced
1/2 lb Whole button mushrooms
1 tb Tomato paste
Simmer the garlic, oregano & onion in the wine for 5 minutes. Add diced bell pepper & the jalapeno pepper. Cook, stirring frequently, for 2 minutes. Add tomatoes & cook for another 5 minutes. Finally add the mushrooms & the tomato paste. Cook until the sauce is thickened. Serve hot. Posted by Mark Satterly in Intercook

How to Cook Louisiana Creole Seafood & Mushrooms
A complete instructional video on how to cook Louisiana Creole Seafood & Mushrooms using Imagine® Louisiana Creole Culinary Simmer Sauce. Get the recipe here:
Yields: 4-5 servings
Ingredients:
1 - 10 oz. pouch Imagine® Louisiana Creole Culinary Simmer Sauce
2 tbsp. Spectrum® Canola Oil
1/2 lb. (31/40) small shrimp, peeled and deveined
1/2 lb. bay scallops
2 C. baby Portobello mushroom, sliced
kosher salt and ground black pepper
1/3 C. Italian parsley, roughly chopped
hot sauce
Cooking Directions:
1) Heat oil in a large skillet over high fire.
2) Add shrimp, scallops and mushrooms; cook 1 – 2 minutes.
3) Season with salt & pepper and cook until mushrooms are wilted, about 2 minutes.
4) Pour in Imagine® Louisiana Creole Simmer Sauce and cook until heated through, about 3 minutes.
5) Stir in chopped parsley and serve hot, with hot sauce, if desired.

This dish is great over rice.
Okra and Mushroom Stew
Ingredients:
2 28-ounce bags of frozen okra
3 pints of whole baby bella and white mushrooms
1 large onion diced
5 small sweet red and orange peppers diced small for color
1 large bell pepper diced
1 bulb of garlic chopped
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp sage
1 tsp thyme
2 tbsp Tony Chachere’s Creole Seasoning Lite
3 tbsp cayenne pepper sauce (optional)
1-2 cups water
2 tbsp cook rice (used at thickening stage)
Directions:
*In a large pot, water sauté onion, bell pepper, sweet peppers, and garlic in ¾ cup water for 10 minutes.
*Add okra and seasonings, stir, and cover. Cook on medium for 10 minutes.
*Reduce heat, and cook for 20 minutes.
*Add mushrooms, and simmer for 10 minutes.
*Put two cups of mixture, two tablespoons of cooked rice, and ¼ cup of water in a blender; blend for 5 seconds of medium and one second on high.
*Add blended mixture and pepper sauce to pot, stir, and simmer for 15 additional minutes.
*Okra will be a dull green when finished.
