1 cn Pizza sauce (8 oz)
1 cn Tomato sauce (8 oz)
1 c Bottled spaghetti sauce
SELECT ONE ONION:
1/2 c Chopped Onion
1 tb Minced Dried Onion
1/2 ts Onion Powder
SELECT ONE MEAT:
2 c Cubed Cooked Beef
2 c Cubed Cooked Pork
2 c Cubed Fully Cooked Ham
2 c Cubed Cooked Chicken
2 c Cubed Cooked Turkey
SELECT ONE PASTA:
2 c Cooked Elbow Macaroni
2 c Cooked Fine Noodles
2 c Cooked Tiny Shell Macaroni
2 c Cooked Rigatoni
2 c Cooked Cavatelli
SELECT ONE CHEESE:
1/2 c Shredded Mozzarella cheese
1/2 c Shredded Cheddar cheese
1/2 c Shredded American cheese
1/2 c Shredded Monterey Jack
- cheese USE ALL OF THESE:
1 tb Butter or margarine
2 tb All-purpose flour
1 cn Stewed tomatoes (16 oz),
- OR cut up Tomatoes 1/4 c Water
1 ds Pepper
. In a large saucpan, melt butter or margarine. Stir in flour. Stir in undrained tomatoes, your choice of sauce, onion or onion powder, water, and pepper. (If using tomato sauce or pizza sauce, add 1/2 teaspoon dried oregano, crushed.) Cook and stir till mixture is thickened and bubbly. Stir in your choice of meat and pasta. Turn into a 2-quart casserole. Bake, uncovered, in a 350F oven for 20 minutes. Sprinkle your choice of cheese atop. Bake 5 minutes more or till cheese melts. Hi guys, welcome to Marks Irish Kitchen, todays recipe is a total comfort food recipe. Its homemade Chicken Casserole with Potatoes and mixed Vegetables in a thick Chicken sauce. Just what is needed after a day at work or when the weather is bad or if you just need a pick me up. Its also a great healthy midweek meal.
Ingredients
1 tbsp olive oil
450g chicken thighs
1 onion, finely sliced
2 celery sticks, thickly sliced
2 carrots, cut into 2cm (3⁄4in)
600 g (1lb 6oz) potatoes cut into large chunks
2 level tbsp plain flour
350 mls(2/3 of a pint) hot chicken stock
Directions
Heat oil in a large, flameproof casserole. Season chicken pieces and brown all over for 10min. Remove and set aside. Drain fat from the pan - there should be around 75ml (3fl oz). Pour just 1tbsp oil back in to the pan and discard the rest. Preheat oven to 200ºC (180ºC fan oven) mark 6.
Add the onion, celery, carrots, to the pan, and cook, stirring, for 5-10min. Stir in the flour, cook for 2min, then pour in the stock. Add the potatoes and season well, then return the browned chicken to the pan. Cover and bring the casserole to the boil.
Cook in the oven for 25-30min until the chicken is cooked through and the sauce is piping hot and thickened.
Serve with crusty bread and enjoy.

pinch of salt
pinch of freshly grated nutmeg

Hurrell Family Tuna casserole Recipe:
8 tbsp unsalted butter
1 large onion medium dice
1/3 cup + 1 tbsp all-purpose flour
6 cups whole milk
4 oz sharp cheddar
12 oz salted canned tuna in olive oil
10 oz frozen peas
1 tsp kosher salt
1/2 tsp fresh ground black pepper
1 lb wide egg noodles of choice

Creamy Vegetable Casserole Recipe
An easy and delicious cheese vegetable casserole that everyone will love!
1 cauliflower
1 pepper
3 carrots
1 zucchini
Olive oil
Salt & pepper
Preheat oven to 450 degrees F. Roast vegetables for 15-20 minutes until tender.
Cream mixture:
1 cup sour cream
1 cup heavy cream
1 & 1/2 cups mozzarella cheese
Italian parsley (optional)
Bake the vegetables mixed with the cream mixture for 15 more minutes or until golden on top.
