4 c AMERICAN CHEESE,SHEDDED 16OZ
1 tb ALL-PURPOSE FLOUR
2 tb GREEN PEPPER,FINELY CHOPPED
1 tb BUTTER
1 1/4 c DRY WHITE WINE
6 oz CREAM CHEESE WITH CHIVES
1 ts PREPARED MUSTARD
1 pk brEADSTICKS/FRENCH brEAD
COMBINE SHREEDE CHEESE AND FLOUR; SET ASIDE. IN A SAUCEPAN COOK GREEN PEPPER IN BUTTER TILL TENDER BUT NOT brOWN. STIR IN WINE; HEAT SLOWLY JUST TILL BUBBLING. GRADUALLY ADD SHREDDED CHEESE, STIRRING CONSTANTLY, UNTIL SMOOTH AND BUBBLY. STIR IN CREAM CHEESE AND MUSTARD; COOK AND STIR OVER LOW HEAT TILL SMOOTH. trANSFER CHEESE MIXTURE TO FONDUE POT.

How To Make An Authentic Cheese Fondue | A Typical Dish From Switzerland
In Switzerland cheese fondue is one of the most popular dishes.
Well, it is a national dish after all.
Gruyère and Vacherin are the most common cheeses used for fondue recipes. Here we have the recipe explained to us - and lucky for you, it's quite simple.

Recipe
800 gr Alpine cheese of which 400 gr Vacherin saveur, 100 gr Appenzeller gold, 200 gr Gruyère AOC medium, 100 gr Heutaler Morteratsch
4 level teaspoons of maizena (corn starch)
350 ml white wine
½ lemon juice
2 cl kirsch (cherry brandy)
1 clove of garlic

Easy Swiss Cheese Fondue Recipe
This classic fondue recipe is crazy simple to make at home in under 30 minutes and perfect for parties large or small!
-----------------------------------------FULL RECIPE BELOW-----------------------------------------
For the Fondue:
1/2 lb grated Gruyere cheese
1/2 lb grated Swiss cheese recommended Jarlsberg or similar
2 tablespoons cornstarch
1 cup dry white wine
1 tsp dry mustard
1/2 tsp ground nutmeg
1 garlic clove
For the Fondue Dippers:
Cubed Bread Pumpernickel, sourdough, baguette, brioche
Blanched Broccoli
Blanched Cauliflower Florets
Steamed asparagus
Sliced Apples and Pears
Assorted pickled vegetables
Grate the cheeses and place in a large bowl. Sprinkle the cornstarch over the cheese and toss to coat. Set aside.
Add the wine to a medium saucepan and bring to a simmer over medium high heat.
Add the cheese, in batches if necessary, to the simmering wine stirring each time until smooth. Once all the cheese has been added, remove from the heat.
Stir in the mustard and nutmeg.
Cut the garlic in half and rub the inside of the fondue pot with the garlic.
Pour the cheese into the fondue pot. Serve with assorted dippers and fondue forks.
