How To make Creamed Spinach Iii
1/4 c Butter or margarine
1/2 c Finely chopped onion
20 oz Frozen chopped spinach
1/2 t Salt
1/8 t Pepper
1/4 t Nutmeg
6 oz Cream cheese, at room temp.
Milk (optional) 1. In a small heat-resistant, non-metallic bowl melt butter in Microwave
Oven 30 seconds. 2. Add onions and heat, uncovered, in Microwave Oven 4 minutes
or until onion is lightly browned. Stir occasionally. 3. Cook spinach. Drain well.
4. Combine browned onion, spinach, salt, pepper, nutmeg and cream cheese in
a shallow, 1 1/2-quart, heat-resistant, non-metallic casserole. If desired, add milk to make a thinner mixture. 5. Heat, uncovered, in Microwave Oven 5 to 6 minutes or until heated
through.

5 tablespoons unsalted butter
4 garlic cloves - minced
1 extra large shallot - sliced (1/2 cup)
1/4 cup all-purpose flour
1 1/4 cup whole milk
pinch of freshly grated nutmeg
kosher salt / fresh finely ground black pepper
1 pound fresh baby spinach - washed, dried very well
1 cup freshly shredded good quality gruyere cheese (about 3 ounces)

We absolutely love creamed spinach as a side dish with our steak. Cream cheese compliments the spinach well in texture and flavor. The earthy greens work well with the creamy side of this dish. Did you know that you can make creamed spinach easily at home? You will just need a skillet and you are good to go to make this over the stovetop. Choose if you want to use fresh or frozen spinach leaves in this dish. Frozen leaves are useful if you are tight on time and fresh ones are great if you get amazing spinach from the farmer's market.
00:00 - Blanch Spinach
00:11 - Cut Onion and Spinach
00:22 - Sauté Onion, Garlic, Spinach
00:36 - Season
00:42 - Mix in Cream Cheese, Milk and Cheese
Ingredients
9 ounce Spinach or 1 cup frozen, *see Notes
1 Tablespoon Olive Oil
1 medium Onion
2-3 cloves Garlic
2 Teaspoon Dried Herbs Thyme or Oregano, *see Notes

CS-Ep.80 – 1-Minute Video! HEALTHY CREAMED SPINACH – Eat your spinach – there, we said it. That said we’re thinking you may find yourself loving this delicious side dish that goes well with everything from seafood and meats to poultry and vegetarian mains.
Here's what you’ll need to make our HEALTHY CREAMED SPINACH:
4 large packages of fresh spinach
2 T of butter
1 white onion, diced
2 cloves of garlic, finely diced
2 T of all-purpose unbleached flour
1½ C of whole milk
the juice of 1 lemon
2 T of fresh dill, chopped (optional)
To prepare:
Wilt the spinach in a steamer insert over a pot of boiling water. Remove from steamer and roughly chop. Melt butter in a large skillet on medium-high heat. Add onion and garlic and cook until translucent. Add flour, stir and cook for a minute or two before adding milk. Stir and cook until the sauce thickens. Add the lemon juice and adjust flavour with salt to taste. Add chopped dill if you wish followed by the chopped spinach. Stir and serve!
