Beef Baked Beans
1 1/2 cup dried pinto beans
bay leaf
garlic clove
butter/ olive oil ( omit if using bacon)
onion
1/2 bell pepper
2 chiles in adobo
1 lb ground beef
3 tbsp tomato paste
3 tbsp molasses
1/4 cup maple syrup
allspice berries
seasonings: 1 1/2 tsp mesquite seasoning ( can omit if using bacon), 1 tsp garlic powder, 1 tsp pepper, 1/2 tbsp smoked paprika, 1/2 tbsp onion powder
*season to taste
1 cup beef broth ( or more depending on how much sauce you want)
Italian pasta salad
12 oz pasta
1 1/4 cup Italian dressing
1/4 - 1/2 cup mayo
1/2 packet italian dressing seasoning
1 tbsp dry ranch
cucumber
pepperoni
salami
cherry tomatoes
1/2 cup parmesan cheese
parsley
banana peppers (canned kind)
*I did not measure this recipe really. Just do it to taste. Add a little then do more if needed.

Green Bean Casserole

Ingredients
2 pounds fresh green beans, ends cut off
Salt
4 slices bacon, cut into 1/4-inch pieces
3 cloves garlic, minced
1 red bell pepper, diced
1/2 whole large onion, chopped
4 tablespoons (1/2 stick) butter
4 tablespoons all-purpose flour
2 1/2 cups whole milk, plus extra for thinning if needed
1/2 cup half-and-half
Freshly ground black pepper
1/8 teaspoon cayenne pepper
1 cup grated sharp Cheddar
1 cup panko breadcrumbs
Directions
Preheat the oven to 350 degrees F.
Cut the green beans in half if you like the pieces to be a little smaller. Blanch the green beans: drop them into lightly salted boiling water and allow the green beans to cook for 3 to 4 minutes. Remove them from the boiling water with a slotted spoon and immediately plunge into a bowl of ice cold water to stop the cooking process. Drain the beans once they're cool and set aside.
Add the bacon pieces to a skillet over medium heat. Cook the bacon for 2 minutes, and then add the peppers, garlic and onions, and continue cooking until the bacon is done (but not crisp) and the onions are golden brown, 3 to 5 minutes. Remove from the heat and set aside.
In a separate saucepan, melt the butter over medium heat. Sprinkle the flour into the pan and whisk immediately to evenly mix it into the butter. Cook for a minute or 2, and then pour in the milk and half-and-half. Continue cooking, whisking constantly, while the sauce thickens, about 2 minutes. Add 1 1/2 teaspoons salt, some black pepper and the cayenne, and then add the grated cheese. Stir while the cheese melts. Turn off the heat.
Add the bacon/onion mixture and stir to combine. Add the green beans and stir gently to combine. Pour into a baking dish and top with the panko. Bake until the sauce is bubbly and the panko is golden, about 30 minutes.

Betty's Leapin' Lima Bean Casserole
Betty demonstrates how to make her luscious Leapin' Lima Bean Casserole. This is a great-tasting casserole, and will perhaps get some of your non-vegetable-eating kids (even big kids) to try some healthy Lima beans!
Leapin' Lima Bean Casserole
(2) 10 to 12 oz. packages frozen Lima beans (I used baby Limas, which are more tender and take less cooking time than other types of green Limas.)
1 stick butter or margarine, melted
1 medium onion, chopped
10.75 oz. can condensed cream of mushroom soup
½ green bell pepper, chopped
1 cup shredded sharp cheddar cheese
Ritz cracker crumbs (approximately 1 inner pack from a box of Ritz crackers, crushed into crumbs)
cooking oil spray
Cook the 2 packages of Lima beans according to package directions, but do not overcook. (Fordhook Lima beans will take longer than baby Lima beans.) Drain Lima beans. In a large mixing bowl, combine the 2 packages of cooked Lima beans with 1 stick melted butter, 1 medium chopped onion, 1 cup shredded cheese, ½ chopped green pepper, and 1 can of cream of mushroom soup. Stir to mix well. Pour mixture into a 13-inch by 9-inch by 2-inch baking dish that has been sprayed with cooking oil spray. Sprinkle Ritz cracker crumbs evenly over the top. Bake at 350 degrees about 20 minutes, or until bubbly and browned on top. Do not overcook. This is a great accompaniment to almost any entrée; also, it's a great potluck dish!

Corn on the cob
4 tbsps melted butter
1/4 cup mayo
1/4 cup sour cream
1 package Cotija cheese
tajin or chili powder
1/4 cup cilantro
2 limes
All-Purpose Seasoning
1 tsp garlic
1 tsp white sugar
Directions:
Preheat oven or Grill to 400 degrees. Clean corn and brush with oil or melted butter. Season with salt, pepper, garlic, onion powder. Grill or bake for 10-15 minutes or until tender. If using the oven, place corn under the broiler for a few minutes to get some char.
Mix together the mayo, sour cream, lime juice, sugar, garlic, and season to taste. In a separate bowl, break apart the Cotija cheese and add some lime zest. Brush mayo mixture onto the corn and then spoon on the cheese. Top with Tajin or Chili powder and serve.
