-Waldine Van Geffen VGHC42A 4 tablespoon Butter 4 tablespoon Flour 6 cup Crawfish Milk* 2 pound Crawfish Tails 1/2 teaspoon Minced Garlic 1/2 cup Chopped green onions x Cayenne pepper x Salt 3/4 c Dijon mustard 1 lb Fresh pasta *Soak the tails in milk for 1 hour and strain. Melt butter and add flour. Cook for 5 minutes over medium heat. Add garlic and cook for 1 minute. Add crawfish milk slowly to make a cream sauce. Cook until thickens. Add the mustard, cayenne, and simmer for 5 minutes. Add crawfish tails and green onions and simmer for 3 more minutes. Add salt to taste and serve over fresh pasta. (wrv)

Indulging in this creamy mushroom and crawfish pasta is like a dream come true! With shiitake and baby portobello mushrooms to give that umami flavor and loads of crawfish tails, this pasta creation is nothing short of amazing. And how can you not love the amazing crawfish-shaped pasta from Dagostino Handmade Pasta?
Ingredients • 1 stick butter • 2 tbsp flour • 1/2 onion • 1/2 red bell pepper • 4 cloves garlic • 1/2 bunch green onions • 1/2 pack shiitake mushrooms • 1/2 pack baby portobello mushrooms • 1 can Rotel • 1 tbsp tomato paste • 1/4 white wine or sherry • 1 pt cream • 1 lb. crawfish • 1 lb. pasta • Parmesan
Directions 1. Cook pasta in salted boiling water until al dente. 2. Melt butter and cook onions and peppers until soft. 3. Add in garlic, green onions and mushrooms. Cook until softened. 4. Add flour to make a light roux. 5. Add tomato paste, Rotel, wine and cream. 6. Cook until sauce thickens and season to taste. 7. Mix in crawfish tails with fat. 8. Toss in pasta and coat. 9. Serve with fresh grated Parmesan.
