Gluten Free Walnut Cranberry Bread • That Will Surprise You!

Gluten-Free Cranberry Walnut Bread Recipe
Ingredients
For the bread
● 2 cups/300g brown or white rice flour
● 1 cup/150g blanched almond flour
● 3 tsp baking powder
● 1 pinch salt
● 6oz coconut sugar
● 1 lemon, zested
● 1 orange, zested
● 1oz agave syrup
● 1 cup orange juice (freshly squeezed is best)
● 1 ¼ cups full-fat coconut milk
● ⅓ cup coconut butter, melted
● ½ cup psyllium husks
● 5oz dried cranberries
● 1 cup walnuts
For the icing
● ⅓ cup coconut butter, melted
● 1 lemon, zested
● ¼ cup walnuts, toasted and chopped
Directions
1. Place the walnuts on a lined baking sheet and toast at 400F/200C for 5 minutes. Leave to cool, chop and set aside to top the bread with later.
2. In a large bowl, sift together the rice flour, almond flour and baking powder. Mix in the salt.
3. In a second medium-sized bowl, stir together the coconut sugar, lemon and orange zest. Rub the zest into the sugar with your fingertips to really bring out the flavour. You know you’re doing it right when the sugar becomes moist.
4. Stir in the agave syrup, orange juice, coconut milk and melted coconut butter. Beat until combined.
5. Mix in the psyllium husks.
6. Add the wet ingredients into the dry ingredients and beat with a hand mixer until just combined.
7. Stir in the cranberries and chopped walnuts with a dry spatula.
8. Lightly grease a loaf tin with cooking spray and scoop the bread dough into it. Smooth down the top with a spatula.
9. Preheat the oven to 180C/350F and bake the bread for 40-50 minutes.
10. Leave the bread to cool completely before spreading the coconut butter on top, sprinkling with lemon zest and topping with the toasted, chopped walnuts.

Orange is one of my favorite holiday flavors, and because there are so many decadent treats around this time of year I wanted to share a lighter recipe that with still satisfy your sweet tooth but not fill you with regrets! If you want to make this non dairy just sub in an extra 1/3 cup of olive oil for the sour cream or omit it! I made this without sour cream and it was very nice, just a little less moist.
I used an extra virgin Spanish olive oil from Olive Oils from Spain for this cake and it gave a wonderfully moist crumb with all the health benefits of olive oil! Toasted pecans and dried cranberries rounded out the flavors in this cake very nicely but you can TOTALLY use fresh cranberries for this cake. I might just cut them in half and dredge in flour before adding to the batter. Using fresh or frozen ones will give you an even zingier cake!

Mom’s Cranberry & Walnut Bread
2 cups flour
1 cup sugar
1.5 tea baking powder
1/2 tea baking soda
1 tea salt
3/4 cup orange juice
Zest of one orange
2 T avocado oil
1 egg, beaten
1.5 cup cranberries, soaked and drained
1/2 cup walnuts, toasted and cooled
Preheat oven 350 degrees
Boil water, place cranberries in bowl and cover with hot water and let sit for five minutes and then drain
Add dry ingredients to stand-mixer bowl, add juice, oil, egg, and combine together
Add cranberries and zest, mix together and pour into greased loaf pan
Bake 60-70 minutes or until cake tester comes out clean
