How To make Cranberry Shrub
1 qt Cranberry juice
2 c Sugar
1 Lemon rind,
2/3 c Lemon juice
1 qt Club soda
1 pt Tart sherbet;(opt)
Simmer cranberry juice, sugar and rind, uncovered, in a saucepan (NOT aluminum) 10 minutes, stirring now and then. Off heat, mix in lemon juice; cool, pour into a bottle, cover and refrigerate. Serve as is on the rocks in punch cups or small glasses. OR, half fill a tall glass with shrub, add ice, and fill with club soda. OR, pour into punch cups and top each serving with a scoop of tart sherbet. From: Terri St.Louis
How To make Cranberry Shrub's Videos
cranberry orange shrub cocktail
Ingredients
8oz cranberries, plus extra for garnishing
1 1/4 cups sugar (divided)
Five thin orange slices, plus some zest and peel for garnish
1 cup water (divided)
1/2 cup quality apple cider vinegar
Ice cubes
Gin
Prosecco, Champagne, or other sparkling wine of your choice (sparkling water is good too)
Shrub
1. Combine the cranberries, 1/2 cup sugar, orange slices, and 1/2 cup water in a saucepan. Bring to a simmer and then continue to cook for a few minutes, stirring frequently, until the cranberries have burst and are floating in a bubbling liquid.
2. Pour the fruit through a fine mesh strainer to separate the berries and syrup. Use a spoon to press all the liquid from the pulp. (Don’t let the fruit pulp go to waste! I processed mine with a little extra water to make a cranberry orange compote. I think it’d be good over cheesecake, cinnamon rolls, bagel and cream cheese, etc.)
3. Pour the syrup into a glass jar along with the vinegar. Seal and shake to combine. Store the shrub in the refrigerator until you’re ready to use.
Sugared Cranberries (for garnish)
1. Stir together 1/2 cup water and 1/2 cup sugar in a saucepan over medium heat until the sugar is dissolved and the syrup starts to simmer.
2. Take the simple syrup off the heat and add however many cranberries you want. Stir to coat the cranberries, then lift them out of the syrup with a slotted spoon or spatula. Set them on a parchment-lined pan to cool and dry for an hour.
3. Grate some orange zest into 1/4 cup sugar and use your fingers to rub the zest into the sugar. Once the cranberries are dry and sticky, toss them in the sugar.
4. Store any unused simple syrup and citrus sugar in sealed containers in the refrigerator so you can make a fresh batch of sugared cranberries when you need it. If you have unused sugared cranberries, store them in the fridge on parchment paper.
Cocktail
1. Fill a lowball glass halfway with ice. Add 1 ounce gin and 2 ounces shrub.
2. Top off the glass with sparkling wine (for a lower-proof cocktail, this could be sparkling water).
3. Garnish with sugared cranberries and orange peel.

Shrubs are very versatile. Often mixed with cocktails or added to a seltzer water for a flavor variation but can be used as a salad dressing or a marinade for meats, fish, vegetables. This one is no different! Really wonderful on its' own or mixed with whiskey and bourbon. Delicious!

Ingredients:
1 C Fresh or Frozen Cranberries
1 C Apple Cider Vinegar
1 C Granulated Sugar
1 Cinnamon Stick
1 Sprig Fresh Rosemary
1 Tsp Black Peppercorn
Tools Needed:
Funnel
Spatula
Ladle
Sieve / Cheese Cloth
Clean Storage Container
In a 2 quart saucepan, combine the fruit, sugar, vinegar, rosemary and black peppercorn.
Bring it to a boil over medium heat.
Then add the cinnamon stick.
Lower the heat and let it simmer for 5 minutes.
Strain and cool before using in your drink.
How to Store Homemade Shrub
Store the homemade cranberry shrub in the refrigerator for up to 4 weeks. A glass jar works well for storage. If you’re concerned about using it up within 4 weeks, this recipe is easily halved to make a smaller amount.
How to Make a Shrub Cocktail
Once you’ve make the cranberry rosemary shrub, it is super easy to make this shrub cocktail recipe! You can make the rosemary cocktail as mild or strong as you prefer (just drink responsibly).
But, we liked the ratio of 2:1:1 for bourbon, shrub, and seltzer.
