Mixed Berry Shrub - Savory
A shrub or drinking vinegar is a refreshing sweet and tart syrup that can be used to flavor water or cocktails. Try using it in marinades and salad dressings as well!
Ingredients:
2 cups sliced strawberries
1 cup blackberries
1 cup blueberries
2 cups sugar
2 cups apple cider vinegar
Bring berries, sugar, and 1 cup water to a boil in a large pot and reduce to a rapid simmer.
Simmer, stirring occasionally, for 15 min. or until liquid has reduced by one third. (Skim off any scum that accumulates at the top of the pot.)
Add the vinegar and simmer on low for 5 min. Allow mixture to cool slightly before straining into a large glass bottle. Chill until ready to serve.
SERVE WITH SPARKLING WATER
Flavor sparkling water with shrub to taste, and enjoy over ice.

Ah the shrub… also known as a drinking vinegar. Don’t let the name scare you away - this sweet, sour, fruit infused syrup is refreshing when mixed with soda water and killer when used in cocktails.
It takes a little time, but it’s well worth it.
Ingredients:
1/3 cup (75 mL) blackberries
2/3 cup (150 mL) sugar
6 – 8 large basil leaves
1/3 cup (75 mL) Raw unpasturised apple cider vinegar
1/3 cup (75 mL)Raw unpasturised balsamic vinegar
Method:
In a 1.5L wide mouth Mason jar; muddle blackberries and sugar.
Slap the Basil to release it's oils and add to the jug (don't muddle the basil, it will become bitter).
Add the two vinegars, and shake the jug to combine (out the lid on obviously...)
Allow the mixture to sit at room temperature for 5 to 7 days, shaking it daily. Strain the mixture with a fine mesh sieve and store in the refrigerator.
Can be stored for 3-4 months; but you'll use it long before then.

I'm gonna show you how to whip up the most amazing Blackberry Shrub – also known as drinking vinegar. It's a game-changer whether you're looking for a refreshing non-alcoholic soda or you want to jazz up a classic cocktail.
Now, listen up, because making a Shrub is as easy as pie. All you need are three simple ingredients: fruit, sugar, and vinegar.
I went with an even mix of fruit, sugar, and vinegar, but you can totally experiment with less sugar – maybe 3/4 or even half the usual amount, especially if you notice some sugar bits not fully melting in.
Oh, and one more thing, if your vinegar isn't the fanciest or you're using an apple cider vinegar, consider going for 3/4 or half the vinegar quantity for a smoother flavor.

During Colonial times, shrubs were a very popular means of preserving fresh produce, usually berries, using vinegar or sometimes a spirit such as rum. Vinegar-based shrubs can provide a delicious and refreshing nonalcoholic drink option too.
The American version of the shrub has its origin in 17th century England where vinegar was used as an alternative to citrus juices in the preservation of berries and other fruits for the off-season. Fruit preserves made in this fashion were themselves known as shrubs and the practice carried over to Colonial America. By the 19th century ( post Civil War and during) typical American recipes for shrubs and vinegars poured over fruit and left to infuse anywhere from overnight up to several days, where popular. The fruit would be strained out and the remaining liquid would be mixed with a sweetener such as sugar or honey and then reduced to make a syrup.

Shrub, the sweet-tart syrup favoured by colonial Americans, is simply made by macerating fruit in sugar until the fruit exudes its juice, straining, then adding vinegar. Mixed with rum and soda, it makes a bracing drink, ideal for summer afternoons.
Our recipe for Blackberry Basil Shrub:
Ingredients:
2 oz dark rum
1 oz shrub syrup
Club soda
Method:
Combine rum and syrup in an ice-filled Collins glass.
Top with club soda and stir gently to combine.
