Rick's Woodsman's Chili Recipe ~ Rick's Tips DIY
This week I took to the kitchen to make a giant vat of my famous woodsman's chili! We love to do this a couple times a year. This time we are planning on freezing meal sized portions to enjoy over the next couple of months, but the next time we make this, we will be canning it for long term storage. This was done a week before Christmas and my wife had no intention of canning anything. So the freezer it is!
This chili is a mixology that I have developed over many years and every time I make it , it just gets more and more delicious. This batch was no exception! Add what you like, take away what you don't, make this your own to suit your personal preferences.
I hope you are inspired to make a giant pot of chili to see yourself through this winter season and I hope you love it!

The recipe:
1 tablesp Whole cumin seeds
1 lbs. Lean Beef Chorizo
1 lbs. Lean ground pork
3 lbs. Beef Stew Meat (or a chuck roast 1 cubed)
2 medium Yellow onions, peeled and chopped
7 cloves Fresh garlic, diced fine
4 large Fresh Jalapeño peppers, chopped
2 -- Habanero peppers, seeded & chopped (very optional)
2 large Fresh Red Bell peppers, seeded & chopped
1 large Anaheim chili, roasted, peeled, & chopped
2 large Fresh tomatoes, chopped
4 -- Fresh green onions, chopped
2 teaspoon Salt
5 tablesp Commercial chili powder (eg., Gebhardt's)
1 tablesp Oregano
1 28 oz. Whole canned tomatoes
1 15 oz. (Optional) Pinto beans, canned
1 15 oz. (Optional) Kidney Beans, canned (low sodium)
PREP-WORK:
Place the cumin seeds in a pie pan and toast in a 375˚ oven for 10 minutes. Remove and set aside.
Roast the Anaheim chili on a barbecue or a cast iron skillet. Put into a a container with plastic wrap to sweat off skin. Peel and chop.
Prepare the onions, garlic, and jalapeños and place in a separate bowl.
Prepare the bell peppers, tomatoes and green onions and place in a separate bowl and add the Anaheim chili to it.
COOKING:
Heat a 6-quart, cast iron, dutch oven (or kettle) and sauté the chorizo and ground pork until cooked, over high heat. Add the meat, and brown over high heat along with the onions, garlic, and jalapeños.
When the meat is brown and the onions clear, add all the remaining ingredients (except the beans). Mash up the canned tomatoes with your hands, but add the juice as well. Stir to incorporate all the ingredients for 10 minutes.
Drain the beans while still in their cans and add to the pot. Simmer for 1 hour and correct the seasoning.
Simmer on low heat for at least an hour.

Greg's Chili Recipe
Ingredients:
2 to 2 1/2 lbs ground Rib eye steak (or ground beef)
(Cut Rib eye into 2 chunks and then pulse in a food processor until it is pea sized bits)
1 lbs hot Italian sausage
1 medium onion chopped
2 medium green bell peppers chopped
2 Poblano peppers chopped
4 cloves garlic minced/crushed
1/2-teaspoon salt
½ teaspoon black pepper
2 tablespoons Olive oil
1 can of dark kidney beans with juice
1 can of black beans with juice
1 Michelob Amber Bach beer
1 15oz can tomato sauce
1 (15 ounce) can diced tomatoes
1 6oz can tomato paste
1 cup shredded cheddar cheese, for topping (optional)
(Spice Mix)
4 tablespoons chili powder
1 tablespoon Emeril's Essence
2 teaspoons ground cumin
1/4-teaspoon cayenne
1-teaspoon sugar
1 tablespoon dried oregano
1 tablespoon smoked paprika (smoked makes a big difference)
Directions:
Brown the ground Rib eye or ground beef, stirring and cutting with the edge of the spatula to break up the pieces, drain grease and set aside. Cook the sausage the same way and drain any excess grease. If the sausage is in a casing remove the casing by slicing the sausage link long ways and peel off the casing. Set the cooked sausage to the side. To the empty pot add the olive oil, onion, bell pepper, Poblano peppers, garlic, salt, black pepper and cook, stirring, until soft. Now add the beer, tomato paste, tomato sauce, diced tomatoes, ground beef, sausage, kidney beans, and black beans. Mix well. Now add the spice mix; sugar, cumin, chili powder, Emeril's essence, smoked paprika, cayenne, and dried oregano, to the pot. Mix well. Lower the heat to low and simmer covered for 2 to 3 hours, stirring occasionally.
ENJOY!
If you can't find Emeril's essence seasoning in a store his is a copycat recipe.
Emeril's Seasoning (Essence)
Ingredients:
• 2 1/2 tablespoons paprika
• 2 tablespoons salt
• 2 tablespoons garlic powder
• 1 tablespoon black pepper
• 1 tablespoon onion powder
• 1 tablespoon cayenne pepper
• 1 tablespoon dried leaf oregano
• 1 tablespoon dried thyme
Directions:
Combine all ingredients thoroughly and store in an airtight jar or container.
