How To make Couscous Patties
10 oz Couscous
6 Green chillies
1 1" piece of ginger
Salt; to taste 2 ts Vegetable oil
1 ts Mustard seeds
1/2 c Urad dahl
3 Dry red chillies
Curry leaves (2-3 sprigs) 2 tb Coconut (optional)
Save about 2 tsp of urad dahl and soak the rest of the urad dahl in water for about an hour. After an hour, grind the urad dahl, green chillies and ginger to the consistency of pancake batter and keep aside. In a pan, heat the 2 tsp veg oil and add the mustard seeds, 2 tsp urad dahl (that was saved), the curry leaves and the red chillies (after cutting them into fine pieces). When the mustard seeds start spluttering and the urad dahl starts turning golden brown, add 3 1/2 cups of water and the urad dahl batter, mix well and close the pan. When the water starts boiling, add salt. (The batter already added will tend to form clusters- Don't worry - Can be fixed later) Add the couscous and mix thoroughly (use a potato masher and get rid of any clusters by mashing them well). After the mixture has solidified, (This should not take more than 5-10 minutes) take the pan out of the heat and let cool. After the mixture has cooled, take a small portion of the mixture and make into a patty and set aside. (You can use some water and/or oil to make the patties if the batter is too sticky) The amounts mentioned in this recipe should yield about 30 patties. Serve with sphaghetti sauce or any spicy chutney.

Makes about 16 patties:
8 ounces couscous
10 ounces broth broth or water
¼ cup olive oil
1 small onion, finely chopped
1 bell pepper, diced
1 zucchini, diced
3 scallions, finely chopped
1 cup spinach leaves, cooked
1 garlic clove, grated
4 ounces feta cheese, crumbled
2 eggs, beaten
Salt and freshly ground black pepper, to taste
Crushed red pepper flakes, to taste
½ teaspoon dried oregano, or to taste
¼ cup fresh mint, finely chopped
¼ cup fresh dill, finely chopped
¼ cup all-purpose
Optional: 1 (7 ounces) can tuna fish, drained
Vegetable oil for frying
For serving:
• Lemon wedges
• Tzatziki sauce
Combine the olive oil along with the chopped onions in a saucepan and cook over medium-heat until soft and golden. About 8-10 minutes.
Bring the broth or water to a boil. Place the couscous in a large mixing bowl, season with some salt and pepper, pour the hot liquid on top and set it aside for 5-10 minutes.
Add the zucchini and bell pepper to the onions and season with salt, pepper, oregano, and crushed red pepper flakes. Add the grated garlic, mix well and cook over medium heat until the vegetables soften. About 5-7 minutes.
Add the scallions to the pan and mix to combine. Cook for 1-2 minutes so that the scallions wilt and soften a bit.
Add all of the veggies to the couscous along with the herbs and mix well until everything is evenly incorporated. Taste and add more salt and pepper, if needed.
Add the crumbled feta and the tuna fish (if using) and mix well.
Add the eggs along with the flour and mix until everything is combined.
Fill a ¼ cup measuring cup with the couscous filling and form the patties into rounds. They can also be turned into meatballs.
Add some vegetable oil to a cast-iron skillet and cook the patties over medium heat 3-4 minutes per side or until golden.
Drain the cooked patties on a plate lined with paper towels.
Serve them with tzatziki and lemon wedges. Enjoy!

Lamb and Couscous Patties with Roasted Sweet Potatoes
What about a new recipe low in calories? One that is pretty low on carbohydrates, too. As side-dish, we’ve used 2 sweet potatoes cut into sticks which went into the oven for 35 minutes. For the lamb patties, we enhanced the mince with couscous, spring onion, and carrot. If you're not avoiding dairy products, it is best for you to serve these with a yogurt sauce.
