How To make Cornell Bread
1 pk Yeast
3 c Bread flour
3 T Soy flour
3 T Nonfat dry milk powder
3 T Wheat germ
1 t Salt
2 T Honey
2 T Butter
1 ea Egg
1 c Plus 2 T warm water
Add all ingredients in the order listed, select white bread, and press "Start". NOTE: Unless otherwise noted all ingredients should be at room temperature. This can be mixed on manual of the bread machine. After Second kneading, remove dough from machine, divide into to equal portions and place in small loaf pans. Cover and let rise to double, about 45 min to 1 hour. Bake at 350 f. for 35-40 min.

Tomato Beef Curry
1 packet Japanese Curry Roux
250g thinly sliced beef
2 large onions
2 tbsp butter
2 tbsp neutral oil
1 can whole tomatoes
2 tbsp ketchup
500mL water or stock (add more depending on consistency)
Salt & Pepper to season
1. Melt 1 tbsp butter and oil in a heavy duty pot.
2. Caramelize the onions on medium-low heat stirring constantly. This should take around 30 minutes.
2. Once the onion has caramelized, add the beef and cook until it gets color.
3. Add tomatoes and water to deglaze the pot. Scrape the bottom of the pot.
(Alternatively, add pureed tomatoes if you prefer a smoother consistency)
4. Once the mixture comes to a rolling boil, add the curry roux packet in. Mix to combine.
5. Add ketchup and finish off with butter. Serve with white rice. Enjoy!

What I love most about it is that it’s so easy to customize and there is an endless amount of toppings so it never gets boring. My easy French toast recipe uses a rich egg custard that’s soaked up into the bread, flavored with vanilla and cinnamon then pan-fried in plenty of butter so it’s soft and fluffy on the inside but perfectly golden and crisp on the outside.
