How To make Corned Beef with Onions and Greens
3 lb Corned beef (not canned)
2 tb Olive oil
4 lg Onions, sliced & in rings
14 1/2 oz Beef broth
12 oz Dark beer
6 Garlic cloves, mashed
3/4 ts Pepper
2 1/2 lb Potatoes, peeled & sliced
1 bn Mustard or collard greens, *
* Shredded Preparation time: 20 min. Cook: 3 hours. Serves 6 to 8 Instead of cabbage, try mustard greens or collard greens with your corned beef for an interesting change of pace. Preheat oven to 325 F. Rinse corned beef under cold water to remove spices; pat dry. In a 6 qt dutch oven, heat oil over medium-high heat. Add corned beef, fat side down, and cook, turning once, until browned on both sides, 5-7 minutes. Remove to a cutting board and carve corned beef into 1/2 inch slices.
In same pot, cook onions over medium heat, stirring occasionally til golden, 3-5 minutes. Add broth, beer, garlic and pepper. Layer corned beef slices and potato slices in onion/broth mixture. USA Fritters:
Boil diced potato and keep some water when they are done. In a frying pan. with some butter add 2 chopped green onions, chopped garlic and diced corned beef. Cook until crispy.
Add the potato and stir. Add a bit of the reserved liquid.
Prepare pancake batter per package instructions. Add the corned beef hash and put in the fridge for at least 1/2 hour (can do overnight!).
Fry pancakes with a bit of oil until golden brown. Serve with ketchup or yogurt, OR yogurt mixed with horseradish!

Nanna Barbara’s Baked Macaroni
Ingredients
1 x 500g/1lbs bag of tube pasta (nan likes penne, I like rigatoni, so choose your favourite but it must be a tube style)
1 x medium sized brown onion
1 x tin of corned beef
1 x cup of water
1 x 500g jar of tomato paste (use less if you prefer)
1 x desert spoon (or to taste) of mild curry powder*
4 x eggs
100g grated parmesan cheese**
salt to taste
Cooking Instructions
1. Bring a large pot of salted water to boil to cook pasta
2. Pre-heat fan forced oven to 180C/350F
3. While the pasta is cooking, dice the onion and sauté until soft
4. Chop corned beef into small blocks and add to the onion, then add water and break up the blocks to soften
5. Add tomato paste, curry powder and salt to the corned beef mixture and stir to combine
6. When the pasta is done cooking, drain and transfer to a large baking dish
7. Pour over the corned beef sauce and mix to coat all the pasta
8. In a small bowl whisk the eggs with half the parmesan cheese, then pour over the pasta and mix to combine
9. Sprinkle the rest of the cheese over the top of the pasta and bake until brown and crispy
10. Enjoy!

Corned Beef Hash Patties

These little patties can be found at little Japanese delicatessens here in Hawaii. They are so delicious and just round out a yummy bento. Here's how to make it yourself!
1 russet potato, diced into 1/4 inch cubes
1 can corned beef
1 egg, beaten
2 Tbsp. thinly sliced green onions
2 Tbsp. minced onion
1/3 tsp. pepper
Flour
Oil for frying.
Cook diced potatoes in boiling water until soft and well cooked. Drain well and cool. Combine the corned beef, egg, green onions, onion, pepper and cooled potatoes in a large bowl. Form into small patties and lightly dust with flour. Cook in a heated pan with oil until golden and cooked through.
