New England Boiled Dinner Under Pressure Noreen's Kitchen
Greetings! St. Patrick's day is just around the corner and corned beef is on sale everywhere. This is a good time to make a New England boiled dinner don't you think?! We love this and for some reason don't have it as often as we should. Many times I will make my own corned beef in anticipation of this meal and having corned beef for sandwiches. This time, with the beef being on sale at a reasonable (not cheap) price this was the perfect choice for dinner.
When I make corned beef I usually like to roast it low and slow or put it in the slow cooker, however I thought this time I would show you how to make this meal in the pressure cooker! I love this preparation because it really goes quick and you can literally have a corned beef dinner on the table in a little over an hour. It must be done in stages and it takes some staging, but once you get the rhythm going you are going to be on your way to one delicious meal!
First I cooked the beef for 35 minutes. Now remember, when you have an electric pressure cooker, the timer starts to count down, only after the vessel has reached the proper temperature. When the meat is done I cook the potatoes, carrots, celery and onion for 5 minutes ( I said 10 in the video but 5 is better) Then I cooked the cabbage for 5 minutes, my machine only goes as low as 5 minutes so I had to watch the timer and when it reached 2 minutes I unplugged it and then let the pressure release.
This was an amazing meal. Cooked quickly on a weeknight with no sweat or effort. This is truly the best way to do this meal! Quick and easy and without a thought to having something in the oven or on top of the stove for hours on end!
I hope you will give this method a try and I hope you love it!
Happy Eating!
