Cottage Cheese Steak | Sanjeev Kapoor Khazana
A classic American Steak recipe for all vegetarians made using paneer, coated with flavourful herbs and roasted to perfection.
COTTAGE CHEESE STEAK
Ingredient
400 gram Paneer cut into 2 inch x 1 ½ inch thick slices
1 tbsp parsley, chopped
3 tsps mixed herbs, chopped
Crushed black pepper to taste
Salt to taste
1tsp red chilli flakes
4 tbsps olive oil
1 tbsp refined flour
½ medium yellow squash and green zucchini, sliced
1 cup coloured capsicum triangles
10 – 12 broccoli florets, blanched
1 carrot sliced and blanched
Sauce
1 tbsp butter
1 tbsp flour
1 cup veg stock
1 tbsp worcestershire sauce
Crushed black pepper to taste
Salt to taste
Method
1. Mix together parsley, fresh herbs, salt ,chilli flakes, olive oil and mix well, add paneer ,cornstarch mix well and set aside to marinate for 10 – 15 minutes.
2. In a bowl add yellow squash and zucchini, coloured capsicum, broccoli, carrots, remaining chilli flakes, salt ,black pepper powder, remaining mixed fresh herb, 1 tbsp olive oil and mix well.
3. Heat 1 tbsp olive oil in non stick pan add vegetable and sauté well and cook for 2- 5 minutes.
4. Heat remaining olive oil in same non stick pan place paneer and shallow fry till light golden from both the sides.
5. For sauce, add butter ,refined flour sauté till brown, add vegetable stock, worcestershire sauce, crushed black pepper and salt mix well cook for 2-3 minutes or until the sauce thickens.
6. Serve paneer steak with prepared vegetable and sauce.

Get ready for another easy, healthy side dish using Dan-O’s Seasoning and simple ingredients. Today we’re going to show you a grilled zucchini and squash recipe using just Dan-O’s Original and our trusty gas grill. This recipe takes just a few minutes of prep time, then Dan-O’s and your grill will do most of the work!
As mentioned, we made this recipe using a gas grill, but you can use a charcoal or electric grill if that’s what you have. Get out your cutting board and a good knife, then get your squashbuckler on as you cut your squash and zucchini (we know squashbuckler isn't a real word but it's for fun). From there, you can choose to add butter or oil, but the most important ingredient is Dan-O’s Original Seasoning! Grill for 20 minutes on medium heat and your veggies will be good to go.

Brent Draper’s Mexican-Flavoured Baked Eggs with Perino Tomatoes & Corn Ribs
Serves 4 Prep 25 mins Cooking 40 mins
2 tsp coriander seeds
1 1/2 tsp cumin seeds
1 1/2 tsp paprika ground
1/2 tsp ground chipotle or Mexican chilli powder
1 red onion thinly sliced
400g Perino tomatoes
2 tbs olive oil
1 Coles Deli Chorizo, finely chopped
2 garlic cloves, thinly sliced
1 jalapeno chilli, thinly sliced
425g can Old El Paso Black Beans, drained, rinsed
1 tbs tomato paste
2 cups (500ml) chicken stock
2 limes, juiced
4 Coles Australian Free Range Eggs
1/3 cup (40g) coarsely grated Coles Manchego Cheese
1 bunch coriander
Crème fraiche or sour cream, to serve
1 jalapeño, extra, sliced
Old El Paso Flour Tortillas, warmed, to serve
Corn Ribs
2 corn cobs, husks and silk removed
1 tbs butter, softened
1 tbs olive oil
1. Preheat oven to 200°C. Line a baking tray with baking paper. Place the coriander seeds and cumin seeds in a small frying pan over low heat and cook, stirring, for 1 min or until aromatic. Add paprika, ground chipotle or Mexican chilli powder and cook, stirring, for 10 secs or until aromatic. Place in a spice grinder or blender until a fine powder forms.
2. To make the corn ribs, cut corn into quarters lengthways. Place corn, butter, 1/2 tsp spice mixture and olive oil in a bowl and toss until the corn is well coated. Place on the lined tray. Bake for 20-25 mins or until the corn is golden and cooked through.
3. Meanwhile, place the onion, tomatoes and half the oil in a large ovenproof frying pan over medium heat. Cook, stirring, for 6-8 mins or until onion and tomatoes begin to soften. Add the chorizo and cook, stirring, for 1 min or until browned. Add the garlic, jalapeño and remaining spice mixture, and cook, stirring, for 1 min or until aromatic. Add the beans and tomato paste and stir to combine. Add the stock and cook for 10 mins or until the mixture thickens and reduces by about half. Add half the lime juice and stir until combined.
4. Use the back of a spoon to make 4 small indents in the tomato mixture and crack in the eggs. Sprinkle over the cheese and place in the oven for 10-12 mins or until yolks are runny but whites are set.
5. Place coriander, remaining oil and remaining lime juice in a small food processor. Season. Process until well combined.
6. Drizzle coriander mixture over the baked eggs. Top with a dollop of crème fraiche or sour cream and sprinkle with extra jalapeño. Serve with corn ribs and tortillas.
