Lima/Butter Beans
Ingredients:
1 lb. Large Dried Lima Beans
1 large Smoked Turkey Leg or Ham Shank
8 - 9 cups Chicken Stock or Broth, can use 2 tbsp of either Better than Turkey or Chicken Bouillon
Salt and Pepper to taste
How to Hot Flash Beans
Clean and sort your beans.
Rinse in a colander with cold water. Add the beans to a large pot and cover them with about 2 inches of water. Bring the water to a boil over high heat, leave the pot uncovered and cook the beans for about 5 minutes. Remove pot from the heat and soak the beans. Let the beans soak in the hot water for 1 hour. Drain the beans into a colander, rinse and then cook according to your this recipe. Enjoy!

Mediterranean Style Baked Lima Beans
Beans:
1lb. dried large lima beans, soaked for at least 8 hours
2 quarts water
2 bay leaves
Sauce:
1 vegetable bouillon cube
1/4 cup olive oil
4 cloves garlic, minced
1 medium yellow onion, chopped finely
1 small carrot, shredded
1 (28 oz.) can diced or crushed tomatoes
2 tsp red wine vinegar
2 tbsp tomato paste
1 tbsp pure maple syrup or agave nectar
1 tbsp dried oregano
2 tsp dried thyme
1 1/2 tsp salt
pinch of ground nutmeg
black pepper
1/4 cup finely chopped fresh parsley
3 tbsp finely chopped fresh mint

Betty's Lima Bean and Corn Succotash
Betty demonstrates how to make her delightful Lima Bean and Corn Succotash. This is a traditional combination of vegetables, along with some sliced green onion and some seasonings. It's also a nice, colorful dish that is inviting as well as nutritious.
Lima Bean and Corn Succotash
2 tablespoons butter (My regular recipe uses 4 tablespoons butter, but I cut this down to save on fat and calories; you may actually leave it out entirely for a fat-free dish.)
12 oz. package frozen whole-kernel corn, cooked according to package instructions and drained
12 oz. package frozen baby lima beans, cooked according to package instructions and drained
¼ cup finely sliced green onion
½ cup whipping cream, optional (I did not use the cream at all, because I was trying to keep the dish low in fat and calories.)
seasoned salt, to taste
ground black pepper, to taste
In a saucepan, melt 2 tablespoons butter. Stir in 12 oz. cooked corn, 12 oz. cooked lima beans, and ¼ cup sliced green onions. If desired, add ½ cup whipping cream. Place over low heat, until thoroughly heated. (If you have added whipping cream, simmer until the sauce is slightly thickened.) Season to taste with seasoning salt and ground black pepper. Transfer immediately to a nice serving bowl, and serve while hot. This is an appealing dish for those of you who are dieting and trying to eat healthier foods. Also, if you are looking for a different vegetable dish to perk up your meal, you are sure to enjoy this one! --Betty

JAMAICAN STYLE BROWN STEW BUTTER BEANS
In today's episode of Meatless Monday, I'm sharing how to make a classic Jamaican Brown Stew in true Vegan/Ital fashion.
My Jamaican Style Brown Stew Butter Beans has all the flavours of a classic brown stew without the meat making great for vegans and vegetarian alike as well as meat lovers/eaters who want to take a little break from meat or who want to whet their feet so to speak in vegan/vegetarian meals.

What I used (adjust to your need and preference)
1 tin butter beans
1/2 an onion
1/2 small sweet pepper
1 small tomato
1 stalk scallion
1 sprig thyme
3 pegs garlic
1 teaspoon grated ginger
6-8 pimento seeds
1 small carrot
1 small iris potato
tablespoon brown sugar
1 teaspoon salt
1 tablespoon soy sauce
1 tablespoon ketchup
