To Make Cucumber Sandwich
Bread Slices
Cucumber
Cream Cheese - 200 Gms
Extra Virgin Olive Oil - 2 Tsp
Pepper - 1/2 Tsp
Mint Leaves
Coriander Leaves
Lemon Juice - 1/2 Tsp
Method:
1. Cut the cucumbers into slices and keep them aside.
2. Take a bowl and mix cream cheese, olive oil, pepper powder, mint leaves, coriander leaves, lemon juice in it.
3.Mix it all and keep it aside.
4. Take a few bread slices and cut off the edges.
5. Spread some cream cheese on two slices, place some cucumber slices one of them and cover it with another bread slice.
6. Amazing Cucumber sandwiches are ready to be served with some tomato ketchup or mayonnaise by the side.
Cucumbers are great for reducing body heat in summers. I consider them an all time healthy snack. It's important we include them in our regular diet for best results. So if you are someone who loves exploring different varieties, this cucumber sandwich is for you. Instead of having plain cucumber slices with little salt & pepper powder every day, you can try these cucumber sandwiches for fun snacks some time. These are also great for your lunchboxes. Ingredients (Serves 6 | Prep time: 10m Cooking time: 0m | 75 calories & 1.7g fat p/serving):
- Half a Cucumber
- 4 slices White Bread
- 50g Mayonnaise
- 50g Cream cheese
- Worcester Sauce
- 1/2 tsp Garlic Powder
- Salt & Pepper (to season)
Cream Cheese Cucumber Sandwich
Servings - 8
INGREDIENTS
Milk - 1 litre
Vinegar - 2 tablespoons
Water - 800 milliliters
Salt - 1/8 teaspoon
Lemon juice - 2 teaspoons
Milk - 100 milliliters
Cucumber - 350 grams
Mint leaves - 2 tablespoons
Coriander - 10 grams
Green chili - 2
Onions - 35 grams
Dry mango powder - 1 teaspoon
Water - 60 milliliters
Salt - 1/2 teaspoon White bread slices - 16
Mint leaves - 1 tablespoon
Pomegranate - 2 teaspoons
PREPARATION
1. Take a heavy skillet, add 1 litre water and bring it to a boil.
2. Add 2 tablespoons vinegar and stir continuously until the milk starts to curdle.
3. Remove it from heat and strain it.
4. Add 800 milliliters water and wash it well.
5. Now squeeze it tightly so whole the water comes out. Rest for 20 - 30 minutes.
6. In a blender, add prepared paneer, 1/8 teaspoon salt, 2 teaspoons lemon juice, 100 milliliters water and blend it well.
7. On a board, place 350 grams cucumber and peal it. (See video)
8. In a blender, add 2 tablespoons mint leaves, 10 grams coriander, 2 green chili, 35 grams onions, 1 teaspoons dry mango powder, 60 milliliters water and blend it well.
9. Transfer, this into a bowl, add 2 tablespoons prepared cheesy cream, 1/2 teaspoon salt and whisk it well.
10. On a board place white bread slice, add some prepared cheese cream and spread it evenly.
11. Add some prepared chutney and spread it evenly.
12. Place cucumber on it cover it with another bread slice.
13. Add some prepared cheese cream and spread it evenly.
14. Place prepared cucumber ribbon on it and cut the edges.
15. Now, cut it into pieces.
16. Garnish with mint leaves and pomegranate.
17. Serve.

Here's what you'll need to make them:
1 1/2 package (12-ounces) cream cheese, softened
1/3 cup sour cream
1/3 cup mayonnaise
1 1/2 tablespoon freshly squeezed lemon juice
2 cloves of garlic, minced
1 tablespoon dried chives
1/2 teaspoon Kosher salt
3/4 teaspoon onion powder
1/4 teaspoon dried dill
Pinch of black pepper
1/3 cup room temperature unsalted butter
2 English cucumbers, sliced thin
2 (1 pound) loaves sliced white bread (preferably from the bakery), crust removed
How To Make Cucumber Tea Sandwiches:
Add the cream cheese, sour cream, mayonnaise, lemon juice, garlic, chives, salt, onion powder, dill, and pepper to a medium-sized mixing bowl.
Using a handheld mixer, mix on medium speed until smooth and well combined. This can be made and kept refrigerated up to 2 days in advance.
To assemble the sandwiches, begin by very lightly buttering each slice of bread all the way to the edges. Then, spread a scant tablespoon of the dill sauce across each slice of bread. Reserve/use any leftover spread as a vegetable dip, if desired.
Divide the sliced cucumber over half of the bread slices, slightly overlapping them. Top with the remaining bread slices and cut into triangles or rectangles. Serve and enjoy!
