How To make Cool 'N Easy Lime Pie
2/3 c Boiling Water
3 oz Box Lime JELL-O
1/2 c Cold Water
Ice Cubes 8 oz Tub COOL WHIP
6 oz Graham cracker crumb crust
1 sm Lime, sliced, for garnish
COOL WHIP for garnish Stir boiling water into JELL-O in large bowl 2 minutes or until dissolved. Mix cold water and ice to make 1 1/4 cups. Gradually add to gelatin, stirring until slightly thickened (consistency of unbeaten egg whites). Remove any remaining ice. Stir in tub COOL WHIP with wire whisk until smooth. Refrigerate 10 to 15 minutes or until mixture is very thick and will mound. Spoon into crust. (There is likely to be some left over) Refrigerate 4 hours or until firm. Garnish with alternating lime slices, and dollops of COOL WHIP for each slice, just before serving. Quick & Easy Key Lime Pie
Whatever the occasion: Pi Day, St. Patrick’s Day, Pie Day, or just wishing you were in Florida… If you want a Key Lime Pie that is delicious, SUPER easy, and SUPER fast, try this recipe!
Graham cracker crust (try to get “2 extra servings” size)
2 cans sweetened condensed milk
4 egg yolks
2/3 cup real key lime juice (I use Nellie & Joe’s brand)
Few drops green food coloring (optional)
Whipped cream for topping
- Preheat oven to 350 degrees.
- Whisk milk, yolks, and juice till thoroughly blended. Add coloring if using and mix in.
- Pour into pie shell and cook 15 minutes until set. Remove from oven.
- Cool for 15 minutes.
- Refrigerate until thoroughly chilled (at least 3-4 hours) and serve with whipped cream.

- 14 Graham Cracker sheets
- 1 stick of Unsalted Butter (1/2 cup Unsalted Butter)
- 2 (8 oz.) package of Mascarpone Cheese
- 2/3 cup of Sweet Condensed Milk
- 1/2 cup Key Lime Juice (about 19 key limes)
- Zest of 1 Key Lime (*optional)
- 1 envelope Unflavored Gelatin (.25 oz envelope)
- 3 Green + 2 Yellow drops of Concentrated Food Coloring
- Limes, Blueberries, Blackberries, and Mint for garnish (Coconut flakes are another great option)
