How To make Cookout Chili
1 lb Beef chuck,hamburger grind
1 Bell pepper(s)
4 Chiles,green,fresh whole
1 Jalapeno pepper,pickled
2 Scallions,coarsely chopped
1 cn Tomato sauce(16oz ea)
1/2 t Oregano,dried,pref. Mexican
1/2 t Cumin,ground
1 t Red chile,hot,ground
1 t Chile caribe
1 cn Kidney beans(16oz ea)
1. Form the meat into three or four hamburger patties.
2. Over a grill, charcoal broil the hamburgers until they are medium rare
on the inside and nicely crisp on the outside. Set them aside to cool. 3. Lightly roast the bell pepper, green chiles and jalapeno (if fresh) over
the fire. Prepare parched red or green chiles according to succeeding recipe, then finely chop all the peppers. 4. Crumble the hamburgers into a large skillet or Dutch oven and add the
peppers and the remaining ingredients to the meat. Simmer over the fire for at least 30 minutes. Stir occasionally. Taste and adjust seasonings.

1 tsp chicken boullion
1 tsp season salt *use to taste like salt

1 tsp salt free cajun seasoning
1 tsp maggie seasoning (optional)
1/2 tsp ginger powder, black pepper, rosemary
flour
potato or cornstarch
buttermilk
Mac and cheese
1/2 stick butter
1- 2 tbsp flour
1 can evaporated milk
1 1/2 cup heavy cream
1/2 cup chicken broth
garlic powder
black pepper
cajun seasoning
8 oz colby jack cheese
8 oz cheedar cheese + more for the top of the mac
paprika
Yams
4 medium yams
4 tbsp salted butter
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 cup brown sugar ( use 3/4- 1 cup for sweeter yams)
1 tsp vanilla extract
Green Beans
drained canned green beans
chicken boullion
cajun seasoning

garlic

This chili recipe is a World Champion Chili Recipe from the 2017 Terlingua Chili Cook-Off. This is the championship-winning recipe from Brent Allen. In the video, we show you how to make a competition style chili (which doesn't allow for fresh ingredients) but we do not follow the recipe to a T, so please check out Brent Allen's competition-winning chili recipe here:

There are several different ways to make a red chili recipe and this is a competition championship chili recipe so it does not include many of those raw ingredients found in a home version of the traditional comfort food chili recipe such as onions or peppers. In competition, you can't add raw ingredients so you must use powders. If you want to try this at home -- which I recommend because it is DELICIOUS -- you can buy all of the chili powders I named online.

Chili cookout
We do a chili cookout after some hiking on the prairies. It was a beautiful day to eat outdoors and decided to warm up some homemade chili that my wife made and it was so delicious and hearty.
