Vietnamese Noodles with Lemongrass Chicken
Vietnamese Noodles with Lemongrass Chicken (Bun Ga Nuong) is one of my signature dishes! The Lemongrass Marinated Chicken is UNBELIEVABLY delicious - it's a Vietnamese marinade, and it's super easy to make.
The Vietnamese Noodle Bowls is made with vermicelli noodles topped with fresh vegetables, herbs, the lemongrass chicken and drizzled with the essential Vietnamese dipping sauce Nuoc Cham.
Fantastic food to make for a crowd, this is so fragrant and just happens to be healthy. It's a total crowd pleaser!

INGREDIENTS:
1 free-range chicken
3 shallots (or 1 yellow onion) in water
1 package of bean thread glass noodles
1 bunch of green onions and cilantro
1 tablespoon of salt (add more to taste)
2 tablespoons of sugar (can be substituted with rock sugar)
1 teaspoon of vegetable seasoning
5 shallots sliced and fried
DIPPING SAUCE
1 lemon
1 chili cut up
1 teaspoon of salt
1 teaspoon of black pepper

Japchae (Korean Style Sweet Potato Glass Noodles)
Japchae is a classic Korean dish made with sweet potato starch noodles. It is originally made with beef, and here you can see a chicken version of it. This dish is specially made during festivals and during the holiday season as a family meal.

Ingredients
300 grams sweet potato glass noodles
2 eggs whisked
300 grams finely chopped boneless chicken pieces
1 tablespoon soy sauce
1 tablespoon finely chopped garlic
½ tablespoon sugar (brown/white)
1 teaspoon black pepper powder
1 tablespoon sesame oil
½ teaspoon salt
1 cup sliced button mushrooms
1 stem of white spring onion
1 medium onion sliced
1 cup sliced capsicum (combined -green, red, and orange)
2 stems of green spring onion chopped
Sauce:
½ cup soy sauce
1 tablespoon brown sugar
2 teaspoon black pepper powder
6 tablespoon cooking oil

???? STIR FRY Glass Noodles With CHICKEN & VEGETABLES | FRIED GLASS NOODLES. Recipe by Always Yummy!
This dish is referred to as a salad but glass noodles with chicken breast and veggies, cooked in Korean-style, quite can be a main course for your lunch or dinner. Mouthwatering, light but hearty, filled with spices and sauces’ aromas – you’ll want to cook it time and again.

✅ Ingredients:
• glass noodle – 5 oz | 150 g
• carrot – 5 oz | 150 g
• fresh cucumber – 8 oz | 240 g
• bulb onion – 5 oz | 160 g
• chicken breast fillet – 21 oz | 600 g
• 2 eggs
• bell pepper – 7 oz | 200 g
• cilantro – 1 oz | 30 g
• sesame seeds – 2 tbsp
• garlic – ½ oz | 15 g
• ground sweet paprika – 1 tbsp
• ground black pepper – ½ tsp
• ground red chili pepper – ½ tsp
• sugar – 1 tbsp
• salt – 1 tsp
• vinegar 9% - 4 tbsp
• ground coriander – 1 tsp
• soy sauce – 6 tbsp
• vegetable oil – 5 tbsp
• sesame oil – 2 tbsp
✅ You will need:
• pan
• 2 big bowls
• carving board
???? Preparation:
1. Pour the glass noodle with boiling water and leave for 5 minutes, then rinse in cold water and leave in a colander to drain, lay then into a bowl.
2. Cut all the vegetables and chicken into thin strips, chop the cilantro and roast the sesame seeds.
3. Heat a pan with 1 tbsp of vegetable oil, whisk the eggs until smooth and pour into the pan, fry the egg roll on both sides over medium heat, take it out of the pan and cut into strips.
4. Add 1 tbsp of vegetable oil into the pan and lay out the cut bulb onion, fry over high heat until semi readiness, stirring constantly, for about 3 minutes. Take out into the bowl.
5. Heat the pan again, add 1 tbsp of vegetable oil and lay out the cut carrot, fry over high heat until semi readiness, stirring constantly, for 3-4 minutes. Lay out into the bowl.
6. Add 1 tbsp of vegetable oil and fry the bell pepper over high until semi readiness for about 3 minutes stirring constantly. Lay out into the bowl.
7. Fry the cut fresh cucumber with 1 tbsp of vegetable oil over high heat until semi readiness, stirring constantly, for about 2 minutes. Into the bowl.
8. Fry the chicken with ½ tsp of salt and ground black pepper each over high heat for 5 minutes until readiness. Place into the bowl.
9. Into the bowl with glass noodles add ½ tsp of salt, the ground red chili pepper, sugar, ground paprika and coriander, vinegar, soy sauce, minced garlic, chopped cilantro, sesame seeds and oil, cut egg roll and all that fried ingredients out of the second bowl, combine all well.
10. Your Korean-style glass noodle with chicken and veggies is ready.
Homemade Glass Noodles Stir Fry Recipe | Quick & Easy
Quick and easy glass noodle stir fry recipe loaded with plenty of vegetables, chewy glass noodles, and your choice of protein. A healthy dinner option for your family and is perfect for a busy weeknight.

▢100 g Glass noodles About 3.5 oz ( Cellophane noodles or bean thread noodles.
▢200 g Chicken breast About 7 oz ( Boneless skinless chicken thigh or breast )
▢2 Eggs Whisked and season with a pinch of salt
▢100 g Cabbage About 3.5 oz ( Cut thin slices )
▢1 Carrot Cut matchstick sizes
▢½ Onion Cut thin slices
▢2 Clove Garlic Finely chopped
▢1 Red chilli pepper Or bell pepper, cut thin slices
▢2-3 tbsp Vegetable oil Or neutral flavour oil
Stir Fry Sauce
▢3 tbsp Light soy sauce Or regular all-purpose soy sauce
▢1½ tsp Dark soy sauce
▢2 tbsp Oyster sauce
▢1 tsp Sesame oil
▢1 tbsp Sugar
Instruction
First, soak the noodles in the hot boiling water for 10-12 minutes. Then rinse with cold water, drain.
Mix all the stir fry sauce ingredients in a small bowl.
Cut the chicken into small pieces and season with 2 tsp of stir fry sauce mixture.
Add the whisk egg in the pan and let it set for few seconds and then crumble it into small pieces. Remove from pan and set it aside.
Stir fry the garlic and follow with marinated chicken then cook for 2-3 minutes or until cooked through.
Follow with the onion, and carrot. Next add the cabbage, stir well and place the glass noodles.
Add the sauce mix in and toss well to combine everything.
Now, add the crumbled egg and spring onions and toss well.
Ready to serve.
