coffee, black

Directions:
Put vegetables in cooker. Add beef, sprinkle with salt and pepper. Add tomatoes and liquids. Cover and cook on low 8 - 10 hours or until tender. If desired, thicken with flour and water base.

2 cups beef stock
2 tablespoons Worcestershire sauce
1 sprig rosemary

Tracy’s Coffee Beef Chuck Roast in Slow Cooker
Try this very easy and flavorful beef roast in the slow cooker - Tracy’s Coffee Beef Chuck Roast in Slow Cooker
Serves 6-8
Ingredients
1 Beef Chuck Roast 3 lbs.
2 Tbsp. Olive Oil
16 oz. Sliced Mushrooms
1 Diced Onion
2 Tbsp. Minced Garlic
1 Tsp. Salt
1 Tsp. Pepper
1 Tsp. Thyme
½ Tsp. Chili Powder
2 Tbsp. Worcestershire Sauce
1 Cup Coffee
Directions
1. Heat 1 Tbsp. olive oil in large skillet and brown all sides of chuck roast. Put in slow cooker.
2. In the same pan, heat 1 Tbsp. olive oil and add mushrooms and onion. Sauté until onion is translucent and mushrooms have finished sweating, approximately 5 minutes.
3. Add minced garlic and seasonings and cook for 1 minute.
4. Add Worcestershire Sauce and coffee and combine well.
5. Add this sauce to the roast in the slow cooker and cook for 8 hours on low.
6. When finished, remove roast from slow cooker and put the juices in a saucepan. Combine 1 cup water and 2 Tbsp. cornstarch. Bring the juices to a boil and slowly add in the cornstarch/water mixture until desired thickness for gravy.
Suggested side for roast is mashed potatoes and gravy or in video shown German Potato Salad.

Coffee Braised Pot Roast Recipe

Ingredients:
Squirt of oil
2 Kg (4 to 5 pounds) beef chuck roast
Salt & pepper to taste
250 mL (1 cup) cup stock
60 mL (¼ cup) cider vinegar
250 mL (1 cup) strong brewed coffee
15 mL (1 Tbsp) Marmite
1 ancho chile
1 medium onion, chopped
2 carrots, chopped
2 ribs celery, chopped
For gravy:
45 mL (3 Tbsp) flour
60 mL (¼ cup) water
Method:
Preheat oven to 150ºC (300ºF)
Season roast all over with salt and pepper.
Heat up some oil in a Dutch oven, and the brown roast on all sides.
Pour in; stock, vinegar, and coffee.
Scoop in the Marmite.
Stem and deseed chile, then break up into the Dutch oven.
Place the veg around the roast, cover and place in the over for 5-6 hours.
If making thickened ‘gravy’.
Remove roast and veg from the Dutch oven.
Place Dutch oven on stovetop, and bring liquid to a boil.
In a small bowl, mix flour and cold water until smooth; gradually stir into Dutch oven.
You may not ned all of this flour / water mixture to reach your desired level of thickening.

INGREDIENTS:
3-5 pound beef roast - I used chuck roast
1 large sliced onion
salt and black pepper
thyme
2-3 crumbled bay leaves
1-2 cups black coffee
Season both sides of the beef and place in slow cooker.
Top with sliced onions.
Pour over black coffee.
Cook on high for 4 hours or on low for 8 hours.
Enjoy.
