3 c Sugar 3/4 c Milk 2 T Instant coffee 1/2 c Non-dairy liquid Coffee cream 1 T Light corn syrup 2 T Butter 1 t Vanilla 1 1/2 c (6 oz.) chopped chocolate Coating or wafers 1/4 c Finely chopped nuts. A mildly flavored fudge for coffee lovers, topped with chocolate and nuts. Combine sugar, milk, instant coffee, coffee cream and syrup in a 3-quart saucepan. Cover and bring to a boil. Uncover and place thermometer in pan; cook without stirring to 236 degrees F. Remove from heat; add butter and vanilla without stirring. Cool to lukewarm. Beat until candy begins to thicken; pour into a buttered 8-inch square pan. Melt the chocolate coating over hot, not boiling water in a double boiler. Spread evenly over fudge, sprinkle nuts over chocolate. Cut into squares before candy becomes firm. Makes about 49 pieces.

1. Heat the condensed milk in a pan until it starts to boil and turn off the stove.
2. Add the roasted nuts into the pan. Add the butter and vanilla essence. Mix well to combine, add the coffee as well.
3. Sift and add the cocoa powder in 3 additions and mix well in between additions.
4. Once all the cocoa powder has been added, it will be firm and pliable.
5. Transfer to a parchment-lined and oiled tray. Level the top and cover with a cling wrap/ plastic wrap.
6. Refrigerate for 3 hours.
7. Dust a surface with cocoa powder and transfer the chilled fudge block and dust on top with cocoa powder.
8. Cut them into small squares and further shaped by hand into any desired shapes.
9. Optionally can be dusted with cocoa powder to finish.
Cooking Tips:
1. Dry roast the chopped nuts on a low flame for 2-3 mins and set them aside, optionally.
