Thanks so much for stopping by my channel to check out this recipe. My late grandma made these cookies every year at Christmas time and when I tasted one today, it was like a lovely visit from her.

INGREDIENTS
1/2 cup butter, softened
1/2 cup vegetable shortening
1 1/2 cups granulated sugar
4 large eggs
1 Tbs lemon juice
3 cups sifted all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup fresh cranberries, chopped
1 cup sweetened coconut flakes
Sift together flour, baking soda, and salt. Add chopped cranberries and coconut then toss together until we’ll combined. Set aside.
Beat together butter and shortening then cream together with sugar. Add eggs, one at a time, ensuring each one is incorporated before adding the next one. Once the eggs, sugar, and shortening/butter are combined, add the lemon juice.
Gradually add the dry ingredients to the wet ingredients, until all the flour is absorbed.
Scoop heaping tablespoons of dough onto a prepared cookie sheet a d bake for about 7 minutes. Watch carefully to ensure bottoms do not burn. Tops will remain pale.

Calypso Cookies (Copycat Publix Recipe)
Consider these an upgrade to sugar cookies and a healthier (more delicious) alternative. Give them a try!
Recipe:

Ingredients
- added 1/4 tsp cinnamon
- added dash, nutmeg
- used 1 cup traditional oats (see directions below)
- used 3/4 cup unsweetened shredded coconut
- used coconut extract instead of almond extract (did not have any almond extract)
- used 1/3 cup pecan chips
Directions
1. In medium bowl, mix sugar and set aside (see video)
2. Oats
- 1/2 cup traditional oats, ground in a food processor until powder/flour texture
- 1/2 cup traditional oats, ground with mortar or hand just to break some of pieces
- in small bowl, mix oats and set aside
3. Add cinnamon and nutmeg to creamed sugar and mix well before adding wet ingredients
4. Lightly whisk egg, milk, and extracts (wet ingredients) before adding to creamed sugar

Butter Pecan Cookies
These butter pecan cookies are to die for! To bring out the nutty flavor of the pecans I toasted them lightly in a brown butter I made myself, and they turned out amazing. That brown butter really adds a depth of flavor to the cookies.
This recipe makes 12 cookies. The dough can be made in advance and stored in the refrigerator. The dough can be frozen but I highly suggest letting the dough thaw some before putting it in the oven. ¼ cup (50g) granulated erythritol
3 tablespoons (45g) cold salted butter

½ teaspoon (3mL) vanilla extract
melted sugar-free chocolate (optional)

Refrigerate the dough for 15 minutes.
Bake at 340°F (171°C) for 15-20 minutes until edges are slightly brown. Let it cool completely before dipping them to your melted chocolate.

Recipe:
2-1/2 cups granulated sugar
1/2 cup evaporated milk
1/2 cup corn syrup
1/2 cup (1 stick) butter
1 teaspoon vanilla extract
2-1/2 cup chopped pecans
2 cups shredded coconut
Combine in bowl coconut and pecans.
In saucepan over medium heat, stir sugar, milk, corn syrup and butter. cook and stir until mixture comes to a full boil, let boil and stir for 3 minutes.
Remove from heat and stir in vanilla and coconut, pecan mixture. stir for about 3-4 minutes until it starts to thicken.
Drop by spoonful on wax paper. Let harden completely.
