Thanks so much for stopping by my channel to check out this recipe. My late grandma made these cookies every year at Christmas time and when I tasted one today, it was like a lovely visit from her.

INGREDIENTS
1/2 cup butter, softened
1/2 cup vegetable shortening
1 1/2 cups granulated sugar
4 large eggs
1 Tbs lemon juice
3 cups sifted all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup fresh cranberries, chopped
1 cup sweetened coconut flakes
Sift together flour, baking soda, and salt. Add chopped cranberries and coconut then toss together until we’ll combined. Set aside.
Beat together butter and shortening then cream together with sugar. Add eggs, one at a time, ensuring each one is incorporated before adding the next one. Once the eggs, sugar, and shortening/butter are combined, add the lemon juice.
Gradually add the dry ingredients to the wet ingredients, until all the flour is absorbed.
Scoop heaping tablespoons of dough onto a prepared cookie sheet a d bake for about 7 minutes. Watch carefully to ensure bottoms do not burn. Tops will remain pale.

Servings: 17-20 pieces.
Ingredients:
- 100 grams of butter
- 1/4 teaspoon salt
- 100 grams of sugar (1/2 cup)
- 2 eggs
- 90 grams of coconut flakes (1+1/2 cups)
- 90 grams of all-purpose flour (1/2 cup)
- 1 teaspoon baking powder
Bake in preheated 350°F (180°C) oven / 15 minutes.
This recipe can be made at home with simple ingredients that are readily available in stores. Enjoy!

Oatmeal Coconut Pecan Cookies | Soft and Chewy | Watch Learn Eat
These soft and chewy Oatmeal Coconut Pecan Cookies are perfect for snacking or having for dessert.

Ingredients
1 cup unsalted butter, softened
¾ cup brown sugar packed (can use organic dark brown sugar if preferred)
⅓ cup granulated sugar (can use organic cane sugar if preferred)
2 eggs
1 tablespoon vanilla extract
1 ¼ cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon kosher salt
2 ½ cups old-fashioned oats
1 cup finely chopped pecans
1 cup sweetened coconut flakes (can use unsweetened if preferred)
Instructions
1. Preheat oven to 350º F and line a baking sheet with parchment paper. Alternatively, you can grease the baking sheet with a little butter if preferred.
2. Use a spoon or an electric hand mixer to beat together butter, brown sugar, granulated or cane sugar, eggs and vanilla in a large bowl until well combined.
3. In another bowl, combine flour, baking soda, cinnamon and salt.
4. Mix flour mixture into butter mixture, being sure not to overmix.
5. Fold in oats, pecans and coconut until well combined.
6. Use a cookie scoop (I used a slightly overfilled #40 disher) to scoop out dough. Roll the dough into balls and place the dough balls onto the baking sheet. Alternatively, you can scoop out with your hands and roll into balls that are between 1 1/4 and 1 1/2 in diameter.
7. Bake for 10-14 minutes until the edges of the cookies are golden brown.
Recipe yields 36 cookies when using a slightly overfilled #40 disher. If using a different size or your hands, the yield will be lower or higher.

- used 1 cup traditional oats (see directions below)
- used 3/4 cup unsweetened shredded coconut
- used coconut extract instead of almond extract (did not have any almond extract)
- used 1/3 cup pecan chips
Directions
1. In medium bowl, mix sugar and set aside (see video)
2. Oats
- 1/2 cup traditional oats, ground in a food processor until powder/flour texture
- 1/2 cup traditional oats, ground with mortar or hand just to break some of pieces
- in small bowl, mix oats and set aside
3. Add cinnamon and nutmeg to creamed sugar and mix well before adding wet ingredients
4. Lightly whisk egg, milk, and extracts (wet ingredients) before adding to creamed sugar
