How To make Coconut Pie Crust
1 Coconut OR 1/2 cup finely
-shredded UNsweetened -coconut 1 Pk (1/4 lb.) graham, crackers,
-broken into pieces 1/2 C Whole wheat pastry flour
1/4 C Safflower, sunflower, canola
-OR other light-flavored oil 1/4 C Water

Preheat the oven to 350~F. Drain the coconut, break it open, and remove the flesh from the shell. Juice the coconut flesh and reserve 1/2 cup of the pulp. In a food processor, grind the graham crackers into fine crumbs. Transfer the crumbs to a small bowl and add the coconut pulp OR shredded coconut. Add the flour and mix well. Add the oil and mix with a fork until the oil is well distributed. Add the water and mix again. Transfer the mixture to a 9 inch pie pan and press it firmly onto the sides and bottom. Bake the pie crust for 20 minutes. Remove the pan from the oven and let the crust cool before filling it, about 1 hour. minutes, Baking time: 20 minutes, Cooling time: 1 hour.

Coconut Pie Crust
7 ounces sweetened flaked coconut
1/3 cup butter, melted
In a 9-inch pie plate, combine sweetened flaked coconut and melted butter. Press evenly in bottom and on sides of pie plate. Bake at 300 degrees (F) for 20 to 30 minutes, or until golden brown. Cool completely on wire rack before filling. This is a great pie crust, and it is interesting to use it with a variety of fillings. I hope you enjoy it! -- Betty ♥

✔️Dough
2 cups all purpose flour [270 grams{
2 tsp sugar [8 grams]
1/4 tsp salt [1.5 gram]
1/2 cup cold butter [115 grams]
7 tbsp vold water [105 ml]
*1 extra egg for eggwash
✔️Filling
1/2 cup sugar [100 grams]
1/2 cup milk powder [60 grams]
1 cup cornstarch [125 grams]
1/4 tsp salt [1.5 gram]
2 & 1/2 cups fresh coconut juice [600 ml]
500 grams fresh coconut meat [2 to 3 pcs coconut fruit)
•Baking pan size: 9.5 x 1.5 inches
•Bake @190°C or 375°F for 45 to 55 mins. or until golden brown top.
