1 ts Vanilla extract
1 1/4 c Flaked coconut
1/2 c Pecans; coarsely chopped

Let me show you how to make this simple and easy coconut pecan pie with ingredients that you probably already have in your refrigerator or pantry.
You will need:
1 unbaked 9 inch deep dish pie shell
4 extra large eggs
1/2 cup light corn syrup
1/2 cup dark brown sugar, firmly packed
1 cup pecan pieces
1 cup shredded coconut
1 teaspoon pure vanilla extract
1/8 teaspoon kosher salt
1/8 teaspoon nutmeg

Almond Joy Pecan Pie & Coconut Pie!
Pecan Pie:
1 Cup Karo Dark Corn Syrup
3 Eggs
1 Cup White Sugar
2 Tbsp. Butter, melted
1 tsp. Vanilla
1 1/2 Cups Pecans, chopped
8 Mini Almond Joy Candy Bars
1 Unbaked 9- inch Deep Dish Pie Crust
Preheat oven to 350F
Mix together the first 5 ingredients. Mix in pecans. Place the Almond Joy candy bars in the bottom of the pie crust. Pour the pie filling into pie crust. Bake in the center of the oven for 50 to 60 minutes depending on how fast or slow your oven cooks. Mine was done in 50 minutes.
Tip: Pie is done when the center reaches 200F. Tap the center lightly it should spring back when done.
Coconut Pie:
I use the same ingredients above except for the pecans. Instead of the pecans add a 14 oz. bag of sweetened coconut. Bake at 350F for 50 minutes. Enjoy!
