potatoes, sweet, peeled, shredded
1/3
cup
sugar, brown, packed
1/4
cup
margarine, or butter, melted
1/4
cup
coconut
1/4
cup
pecans, broken pieces, toasted
1/4
teaspoon
cinnamon, ground
1/4
teaspoon
coconut flavoring
1/4
teaspoon
vanilla
1
coconut, toasted, optional
Directions:
In a 3-1/2 quart slow cooker, combine potatoes, sugar, margarine, coconut, pecans and cinnamon. Cover; cook on Low for 6 to 8 hours or on HIGH for 3 to 4 hours. Stir in coconut flavoring and vanilla. Sprinkle with toasted coconut if desired.

Cook the potatoes ahead of time to speed up the process ????
Oven temp -350f roast the potatoes for 1-2 hours
Then bake casserole for 25 minutes
Then another 5-8 minutes after adding the marshmallows
Ingredients:
3 lbs orange sweet potatoes
4-5 tbsp brown sugar
1/2 tsp salt
1 tsp ground cinnamon
1 tsp vanilla
1/4 cup heavy cream
1/4 cup melted unsalted butter
2 eggs
For the pecan streusel topping
1/4 cup brown sugar
1/4 cup APF
1/4 cup old fashioned oats
1/2 cup chopped pecans
1/2 tsp ground cinnamon
1/4 cup melted butter
Mini Marshmallows to top it off!!!!

Island Coconut Sweet Potato Mash

Jazz up your weeknight dinner with this sweet, savoury and fun side-dish.
SERVINGS: 4 (or 2 cups/500mL)
INGREDIENTS:
3 Sweet Potatoes, (about 2 lb/1 kg)
1 GAY LEA - Coconut Whipped Cream
1/4 tsp Ground Cinnamon
1/2 tsp Salt
1 tsp Ground Cumin
1 Green Onion, finely chopped
1 Lime, juiced
INSTRUCTIONS:
Pierce sweet potatoes several times with a fork or paring knife. Microwave on high for 10 to 12 minutes or until very soft. Cool just until easy to handle
Scrape potato flesh from skins into a bowl; discard skins. Mash well with a fork. Stir in lime juice, onion, cumin, salt, cinnamon and pepper. Fold coconut whipped cream into sweet potato mixture until combined. Serve immediately.
TIPS:
Sweet potatoes can be cooked ahead and rewarmed before mixing with remaining ingredients

OLD SCHOOL SWEET POTATO PECAN PIE ???? (HAPPY THANKSGIVING)
This is a pie i have been working on for about 18 months
i wanted to develop a pie that tasted exact like a sweet potato pie and a pecan pie and had the crispy crunchy flavorful topping and the creamy smooth sweet potato filling
This is the final i came up with and im excited to share it with y'all
RECIPE FOR THE SWEET POTATO PIE:
2 eggs
2 cups mashed sweet potatoes
1 1/4 cups evaporated milk
1/2 cup sugar
1/3 cup packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 tablespoons vanilla
4 oz melted butter
One 9-inch slightly par baked
Preheat the oven to 375 degrees.
In a large mixing bowl, beat the eggs. Add the mashed sweet potatoes, evaporated milk, butter , vanilla both sugars, cinnamon, and salt. Beat to combine, 1 to 2 minutes.
RECIPE FOR PECAN TOPPING:
4 TBSP. STICK BUTTER
1/2 CUP BROWN SUGAR
2 TBSP. FLOUR
1/4 CUP CHOPPED PECANS
1/4 CUP PECAN HALVES
Use a pastry fork or spoon and blend the butter, brown sugar and flour well. Blend until it is crumbly and consistent in texture. separate the mixture in 2 small bowls Add chopped pecans and mix well in one bowl
in the other bowl add pecan halves and mix well
Sprinkle pecan pieces and then place pecan halves on potato mixture and bake at 350 degrees until set. About 40-45 minutes.
