How To make Coconut Bread Trinidad
3 c flour
1 tsp salt
1 c sugar
1 c evaporated milk
1/2 c unsalted butter
melted and cooled
1 tbsp baking powder
2 c finely grated fresh coconut
1 large egg :
well beaten
1 tsp vanilla
sugar
Sift flour, baking powder and salt. Stir in coconut. Combine egg, milk, vanil la and butter. Make a well in the dry ingredients. Pour liquid into the well. Stir lightly but thoroughly and pour into 2 greased 8 or 9 inch loaf pans, filling pans about 2/ 3 full. Sprinkle the top of the batter with sugar. Bake at 350 F for about 55 minutes or until they test done.
Notes: I have used packaged coconut instead of the fresh but found a little more liqui d was needed. Also the flavor was not quite as good but still passable.
Nice toasted for breakfast but watch since it burns easily.

This coconut bake is soft and buttery! It is perfect with a spread of butter and a slice of cheese when hot. It stays soft for several days and it makes a mean sandwich with any filling! Enjoy!
Ingredients:
6 cups all purpose flour
2 tbsp brown sugar
2 tbsp granulated sugar
1 1/2 tsp salt
1/2 tsp grated nutmeg
4 tsp yeast
1/2 cup unsalted butter
1 1/4 cup grated coconut (Do not squeeze dry)
2 1/4 cup coconut milk
3 tbsp coconut milk powder (optional)
1 tsp mixed essence
1/4 cup flour for kneading
Butter for brushing the finished bakes
Bake the coconut bakes in a preheated oven at 375 degrees for 20-25 minutes or until golden brown.
Closer to the end of baking, brush the top of the bakes with butter for a golden color, and then brush again with butter when out of the oven so the tops stay soft.

Trini Coconut Sweet Bread | Moist and Crumbly ( no egg ) | VEGAN - Episode 991
This makes 1 loaf - yes it can be doubled!
Bake at 325 Deg F. For 1 hour and 15 mins or until cooked
1 1/2 Cup AP flour
1/4 tsp salt
1 1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup soft butter unsalted
1 cup fresh grated coconut or packaged coconut flakes
1/2 cup sugar
1/4 cup raisins
1/4 cup cherries
1/4 cup mixed peel
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup eggless mayo or regular mayo
3 tbsp cherry juice from maraschino cherries
3/4 cup coconut milk or full cream
2 tsp vanilla or mixed essence
