2 Eggs 1/2 c Sugar 1/2 c Oil 1/2 c Milk Grated zest of 1 lemon Grated zest of 1 orange Fresh juice of one lemon and One orange (should measure 1/2 cup, combined) 1 1/4 c Flour 1 c Whole wheat flour 1 tb Baking powder 1/2 ts Baking soda 1/2 ts Salt Pour the wet ingredients into the dry ingredients and stir until just moistened. Spoon into a medium muffin pan (greased) and bake in a 400F oven for about 20 minutes. Remove from pan and allow to cool. These muffins were a huge hit at our house!!!
