How To make Cinnamon Walnut Biscotti
2 c Flour
1 c Plus 2 T. sugar
divided
1/2 ts Baking soda
1/2 ts Baking powder
1/4 ts Salt
3 Eggs :
divided
1 Egg yolk
1 ts Vanilla extract
1 tb Orange zest
1 1/2 c Walnuts -- coarsely chopped
And toasted 1/4 ts Ground cinnamon
1 ts Water
Preheat oven to 300=B0F. Grease and flour baking sheet. Using an electric mixer with a dough hook attachment, combine flour, 1 C. sugar, baking soda and powder, and salt in a large bowl until blended. In a small bowl, whisk 2 eggs, 1 egg yolk, vanilla, and orange zest. Add egg mix to flour mix; continue beating until a soft dough forms. Turn onto a lightly floured surface. Add walnuts and knead 3 minutes or until walnuts are evenly distributed. Divide dough in half. On baking sheet, shape each piece of dough into a 2 1/2 x 10-inch loaf, flouring hands as necessary. Allow 3 inches between loaves on a baking sheet. In a small bowl, combine remaining 2 T. sugar and cinnamon. In another small bowl, beat remaining egg and water. Brush loaves with egg mixture; sprinkle with sugar and cinnamon mix. Bake 45 to 50 minutes or until loaves are lightly browned. Cool 10 minutes on baking sheet. Cut loaves diagonally into 1/2 inch slices. Lay cut cookies flat on a baking sheet. Bake 15 minutes, turn cookies over, and bake 15 minutes longer. Transfer cookies to wire rack to cool completely. Authentic Anise Biscottis
Ingredients
•3 cups all purpose flour
•3/4 cup granulated sugar
•3 eggs
•1/2 cup vegetable oil
•1 teaspoon baking powder
•pinch salt
•2 teaspoons anise seeds and dry orange peel (optional)
Instructions
In a Medium bowl, sift together flour, baking powder, anise seeds powder and salt salt. Set aside.
In a large bowl, beat the eggs and the sugar gradually and add the oil. Whisk for another minute.
Incorporate the flour mixture. Mix until combined.
Divide dough in half and shape each dough half into 10 1/2-inch-long, 4-inch-wide log. Transfer both logs to prepared baking sheet, spacing apart.
Bake logs until golden brown (logs will spread), about 25 minutes.
Using serrated knife, cut logs on diagonal into 1/2-inch-wide slices. Arrange slices, cut side down, on same baking sheet. Bake 12 minutes. Turn biscottis over; bake until just beginning to color, about 8 minutes. Transfer to rack and cool.

Chocolate Chip Walnut Biscotti | Biscotti Al Cioccolato E Noci
✿ INGREDIENTS ✿
Flour - 3 cups
Baking Powder - 2 teaspoons
Salt - 1/4 teaspoon
Canola Oil - 1 cup
Sugar - 1 cup
Eggs - 3
Crushed Walnuts - 1 cup
Chocolate Chips - 1/2 cup
Cinnamon & Sugar Topping - 1 teaspoon of cinnamon and 2 tablespoons of sugar
✿ DIRECTIONS ✿
∙ In a large bowl, add eggs oil and sugar and beat for one minute.
∙ Start adding in 2.5 cups of flour and mix for a couple minutes (add in the salt and baking powder during this step as well).
∙ Use the remaining 1/2 cup of flour and spread on the counter where you will be working the dough.
∙ Add in the chocolate chips and walnuts and work the dough for a couple minutes until the flour is form the counter is absorbed into the dough
∙ Cut chunks of dough and begin forming them into logs,. Place on a parchment lined baking sheet.
∙ Once the logs are formed, flatten them out by pushing them down with your fingers.
∙ Sprinkle the cinnamon sugar mix over the top of the logs
∙ Bake them at 350º for 25 minutes.
∙ Cut the logs into biscotti while the logs are still warm from the oven, use the angled cut technique just like Nonna.

Simple AND Delicious Biscotti Recipe
Easy Biscotti with Cranberries and Pistachios
This is a cranberry biscotti recipe that will blow your socks off! As you prepare for the holiday season try out this tasty and colorful treat to go with your cup of coffee. It's a cranberry and pistachio biscotti that you will enjoy with friends and family. This is the video that will show you how to make a holiday biscotti that you will be proud of.
Ingredients:
1/4 cup extra virgin olive oil
3/4 cup sugar
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 eggs
1 3/4 cup flour
1 teaspoon baking powder
1/2 cup dried cranberries
1 1/2 cups shelled pistachios
Cream oil and sugar into a bowl.
Add extracts and beat in 2 eggs.
Mix dry ingredients (flour and baking powder) in a separate bowl and add slowly to your wet ingredients as you mix with a hand mixer.
Add cranberries and pistachios then mix with a spoon.
Cover and refrigerate about 30 minutes so that it is easy to form into a log before baking.
Bake for 30 minutes at 300℉, then cool for 10 minutes.
Slice into 1/2 inch slices, lay onto their sides on a baking sheet, and bake again for 8 minutes at 275℉.
Turn over and keep baking for 4 more minutes.
Cool and serve!

Walnut Biscotti made with Olive Oil

Makes 20-22
The Wet Ingredients:
• 1 cup (250 ml) light olive oil
• ¼ cup (60 ml) orange juice
• 1 and ¼ cup (130 g) granulated sugar
• 3 eggs
• 1 teaspoon pure vanilla extract
The Dry Ingredients:
• 3 and ¼ cups (460 g) all-purpose flour
• 1 cup (125 g) chopped walnuts
• 2 teaspoons baking powder
• 2 teaspoons ground cinnamon
• ¼ teaspoon salt
• Optional: ¼ cup sesame seeds
Preheat the oven to 375 °F, 190 °C.
Combine all of the dry ingredients in a large bowl and whisk well together.
In the bowl of a tabletop mixer combine all of the wet ingredients together and beat on low speed until incorporated.
Add the dry ingredients and beat until combined.
Transfer the biscotti dough onto a surface dusted with flour and cut into 2 equal portions.
Form each portion into a 12-inch-long and half-inch thick log and place both logs onto baking trays lined with parchment paper.
Bake in the center rack of the oven for 30 minutes or until firm to the touch.
Remove from oven and cool for 10 minutes.
Cut approximately 1-inch thick slices using a serrated knife. Place the biscotti slices back onto the baking tray lined with parchment paper.
Reduce the heat to 300 °F, 150°C and bake the biscotti an additional 15-20 minutes or until dry and golden.
Set aside to cool completely, then store in an airtight container.
