BUNNY'S CHUNKY MINESTRONE SOUP
Bunny shows you how to create a delicious chunky minestrone soup.
Follow her method using the ingredients below.
Recipe ingredients in no particular order -
1 x sliced leek
1 x cubed potato
6 x chopped leaves of Cavolo Nero
1 x small swede cubed
1 x small turnip cubed
1 x small sweet potato cubed
Tin of plum tomatoes
Tin of Rosecoco Beans
1 x tbsp fresh basil
1 x heaped tsp vegetarian bouillon
1 x tsp garlic granules
1 tsp dried parsley
half tsp of dried mixed herbs
quarter tsp of white pepper
1 x tsp paprika
2 tsp rock salt
1 x tbsp virgin olive oil
2 x tsp roasted fennel seeds
2 x pints of hot water
2 x bay leaves
25g farfalline pasta

This is another recipe for the Ninja Blender, but you can also use a saucepan to cook and a stick blender to blend. This is ideal for a vegetarian or vegan soup. If vegan just substitute the Parmesan cheese for the vegan equivalent.
The video shows the list of ingredients and the soup will take around 15 minutes to prepare and 30 minutes to cook. It is suitable for home freezing.

Ingredients:
1 tablespoon olive oil
45 grams onion, diced
2 tablespoons spring onion, minced
2 cloves garlic, cut into flakes
165 grams tomato (about 1½ medium tomato), diced
125 grams zucchini, diced
1 bay leaf
¼ teaspoon thyme, chopped
¼ teaspoon rosemary, chopped
¼ cup basil leaves, chopped
1½ cup vegetable stock (see recipe link in method below)
1 cup water
¼ cup black-eyed beans (45 grams), soaked for 2 hours and cooked till tender in a pressure cooker or saucepan
½ teaspoon black pepper powder
½ teaspoon sea salt
1½ tablespoons tomato paste
½ cup macaroni (45 grams macaroni), optional
