How To make Chunky Granola (With No Oil Added)
8 c Rolled oats
1 c Nuts (more if desired,
-- up to double this amount) 1/2 c Sunflower seeds
1/2 c Whole millet
-OR- whole buckwheat groats 3 c Whole wheat flour (or more)
-OR- part cornmeal, - rice flour, - or other whole-grain flour 1 ts Salt (or more, as desired)
1/2 c Honey (or more,
-- up to double this amount) 1 c -Hot water, or up to:
2 c -Hot water *
1 ts Vanilla
* Note: More water makes the granola chunkier, less makes it crumbly. Preheat oven to 350 F. In a large bowl or pot, combine oats, nuts, seeds, millet, flour, and salt. Mix together honey, water, and vanilla, and stir into dry ingredients. Spread on a lightly oiled baking sheet and squeeze mixture together to form small chunks, but don't crowd; the chunks need to bake clear through. Roast until golden brown, about 10 to 20 minutes. (With the larger amount of water, reduce heat and bake longer.) As it bakes the granola may need stirring to brown evenly. Cool thoroughly before storing. Variations: Replace part of the water with the freshly squeezed juice of 2 oranges (and add the grated rinds if the oranges were not sprayed with pesticides), or use 2 teaspoons orange oil. For "gingerbread" granola, use half molasses (for half honey) and add 2 teaspoons cinnamon, 1 teaspoon ginger and 1/4 teaspoon cloves. For a nice change, substitute maple syrup for honey. This is my favourite recipe for homemade granola. Its nutty, its sweet-and-salty, its got crunchy clusters - its absolutely addictive.
Try this super simple, healthy, delicious recipe. Homemade granola is great as a healthy breakfast with fresh fruits + milk/yogurt or as a healthy snack. Enjoy!

NUTTY GRANOLA
▶Ingredients
75g (1/2 cup) chopped raw almonds
60g (1/2 cup) chopped raw walnuts
60g (1/2 cup) chopped raw pecans
100g (1 cup) rolled oats
50g (1/2 cup) almond flour
1.5g (1/4 tsp) salt
90g (1/4 cup) honey or maple syrup
▶Directions:
1. Preheat oven to 160C/325F.
2. Roughly chop nuts with a knife / food processor.
3. Add all ingredients into a bowl and mix well.
4. Spread mixture evenly on a lined baking tray. Press down gently with a spatula to create clusters.
5. Bake for 12-15 mins until lightly browned.
6. Take out of the oven. Gently flip/stir the granola.
7. Bake for an additional 5-15 minutes until golden brown.
8. Let cool completely. Granola will crisp up as it cools.
9. Store in a jar or airtight container.

HOMEMADE GRANOLA RECIPE
(makes 16 servings)
Ingredients:
3 cups rolled oats (270g)
1/2 cup chopped almonds (70g)
1/2 cup chopped walnuts (60g)
1/2 cup pumpkin seeds (70g)
1/2 cup sunflower seeds (70g)
2 tbsp flaxseed meal
2 tsp ground cinnamon
1/2 tsp salt
1/2 cup unsweetened applesauce (130g)
1/3 cup maple syrup, honey or agave (80ml)
1 egg white
1/2 cup dried cranberries (or other dried fruits) (70g)
NUTRITIONAL INFO (per serving):
185 calories, fat 10g, carb 19.5g, protein 6.2g
Preparation:
In a bowl, combine all the dry ingredients, rolled oats, almonds, walnuts, pumpkin seeds, sunflower seeds, flaxseed meal, cinnamon and salt.
In separate bowl, mix together applesauce and maple syrup.
Pour the wet ingredients into the dry and stir well for a minute, to fully incorporate and turn sticky.
Whisk egg white until foamy and add to the granola mixture, and mix well.
Add the dried fruits, and mix one more time.
Spread the granola mixture onto a lined baking tray (13x9 inch in size) and press it well using a spatula.
Bake at 325F (160C) for 30 minutes.
Let it cool complete, then break into larger or smaller chunks.
Serve with yogurt or milk, and top with some fresh berries.
Enjoy!
