1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1 small onion, diced
3 carrots, cut into 1/2-inch rounds
3 stalks celery, diced
1/2 teaspoon thyme
1/2 teaspoon rosemary
2 bay leaves
1 teaspoon salt
1/2 teaspoon black pepper
5 medium golden potatoes, quartered
5 cups chicken broth
1 cup green peas
1/2 cup half & half

Chicken Ramen Noodle Casserole

Ingredients
Six 3-ounce packages chicken-flavored ramen noodles (1 flavor packet reserved; the remaining discarded)
One 8-ounce container scallion cream cheese
4 cups whole milk
2 cups shredded rotisserie chicken (skin and bones discarded)
One 10.8-ounce bag frozen broccoli florets
8 ounces shredded Cheddar
Directions
Preheat the oven to 400 degrees F.
Put the ramen squares in a single layer covering the bottom of a 13-by-9-inch baking dish. Whisk together the cream cheese, milk and the 1 reserved flavor packet from the ramen in a medium bowl. Pour the mixture over the ramen. Scatter the chicken over the sauce and noodles and then scatter the broccoli. Sprinkle with Cheddar, making sure to distribute it evenly across the whole casserole.
Bake until the noodles are cooked through, the cream sauce is bubbly and the cheese melts, 30 to 35 minutes.

This is my recipe for a lighter Spring chicken casserole, that's packed full of fresh flavours. Casseroles need not be just for the winter months, and with a few simple ingredients, you can get great results.
You can switch up some of the ingredients if you want to. You could use chicken breast portions, or maybe some diced lean pork with a drop of cider added in? Also, if you can get some fresh tarragon, that will work amazingly well in this light chicken casserole.
I've also included a bonus recipe later on in the video, you'll have to watch to find out what it is though.

To make my lighter spring chicken casserole you will need:
► 6 skinless chicken thighs
► 3 spring onions
► 2 medium sized carrots
► 400g of new potatoes
► 700-800ml of chicken stock
► 3 tbsp of plain (all purpose) flour
► About 1 tbsp of fresh dill or tarragon
► About 2 tbsp of freshly chopped parsley
► 150g of frozen peas
► 2 bay leaves
► Salt & pepper
► Oil for cooking
