2 c Cauliflower flowerets :

6 c Chicken broth, defatted
2 c Garbanzo beans, cooked or 15
1/2 c Long-grain rice -- uncooked
1 1/2 ts Dried thyme leaves
1 t Dried basil leaves
1 t Dried marjoram leaves
2 lg Bay leaves
1/4 ts Black pepper
1 cn Stewed tomatoes
Recipe by: Skinny One-Pot Meals - ISBN 0-940625-75-X In 5-qt crock pot, combine onion, celery, carrots, and cauliflower. Add chicken, broth, beans, rice thyme, basil, marjoram, bay leaves, and pepper. Cover and cook on high 1 hour. Lower heat to low and cook an additional 6 to 8 hours. Remove bay leaves and discard. Remove chicken. When cool enough to handle, remove from bone and cut chicken into bite-sized pieces. Add stewed tomatoes to crock pot, and cook on high an additional 10 to 15 mins. Return chicken to crock pot, and cook an additional 5 mins. Crockpot chunky Chicken Noodle Soup…
Ingredients:
2-3 Lbs Chicken Breast
2 Cups Carrots(Thin Sliced)
1 Cup of Celery (2-3 Stalks)
1 small Onion(Diced) or 1 1/2 cups
1/2 TBS Ginger
1 TBS Minced Garlic
1/4 TSP Thyme
1/4 TSP Oregano
1-2 TSP Salt
1-2 TSP Pepper
8 Cups Low Sodium Chicken Broth
1 Bay Leaf
Directions.
Clean and peel carrots then dice carrots
Clean and dice celery and onion
Add chicken breast to crockpot followed by the rest of your ingredients below:
2 Cups Carrots(Thin Sliced)
1 Cup of Celery (2-3 Stalks)
1 small Onion(Diced) or 1 1/2 cups
1/2 TBS Ginger
1 TBS Minced Garlic
1/4 TSP Thyme
1/4 TSP Oregano
1-2 TSP Salt
1-2 TSP Pepper
8 Cups Low Sodium Chicken Broth
1 Bay Leaf
Cook on High for 3 hours
After 3 hours use two forks too shred chicken
Once chicken is shredded
Add Noodles and make sure they are submerged under the broth cook for additional 30 Mins

CHUNKY CHICKEN PASTA SOUP
Ingredients
1 boneless chicken breast, cut into ½ inch cubes
½ cup macaroni
1 tablespoon olive oil
1 tablespoon chopped garlic
1 medium onion, chopped
1 small carrot, peeled and cut into small cubes
1 inch celery, finely chopped
¼ medium broccoli, separated into small florets
3 cups chicken stock
¼ cup fresh cream
2 teaspoons finely chopped fresh parsley
Salt to taste
Crushed black peppercorns to taste
10 grams Parmesan cheese + for garnishing
Herbed garlic bread slices for serving
Method
1. Heat olive oil in a deep non-stick pan. Add garlic and onion and sauté for 1 minute. Add carrot, celery and broccoli and sauté for 1-2 minutes.
2. Add chicken cubes, mix and cook for 1-2 minutes. Add macaroni and chicken stock, mix, cover and cook till the macaroni is done.
3. Add cream, parsley, salt, crushed peppercorns and grate 10 grams parmesan cheese, mix and bring the mixture to boil.
4. Pour soup in individual serving bowls, grate some parmesan cheese and sprinkle some crushed peppercorns on top.
5. Serve hot with herbed garlic bread slices.
