How To make Christmas Tree Biscuits
6 oz Plain flour
1/2 ts Bicarbonate of soda
1 t Ground mixed spice
2 oz Butter, chilled and cubed
3 oz Soft light brown sugar
2 tb Golden syrup, heated
1 Egg, beaten
Plain flour for dusting DECORATION 9 oz Packet coloured fondant
Icing Glace icing made with 2oz Icing sugar & 2 tspn water Icing sugar for rolling Silver balls, sweets, Desiccated coconut, gold Thread
Preheat oven to 190'C (375'F). Grease two baking sheets. Sift the flour, bicarbonate of soda and spice into a bowl. Rub the butter into the flour until the mixture resembles fine breadcrumbs. Stir in the sugar. Add the golden syrup and egg and mix to form a dough. Gently knead the dough on a floured surface until smooth, the roll out to 1/4 inch thick. Use christmas cutters to cut out 16 shapes. Lift shapes on to baking sheets and bake until just firm to the touch. Make a hole large enough for gold thread at the top of each biscuit. Transfer to cooling rack and leave until cold. To decorate, roll out fondant icing on a clean surface dusted with icing sugar. Cut out shapes with cutters and place on biscuits, securing them with a little water. Make a hole for thread as before. Decorate with piped glace icing, silver balls, sweets or coconut. Thread each biscuit with gold thread and hang on Christmas tree, if liked.

Today, I am making delightful Christmas tree cookies all from scratch to celebrate this Christmas season! The type of cookies is called icebox cookies, which you can also enjoy by chilling in a fridge. I hope you’ll enjoy this video and try it at your home if you get a chance!

[INGREDIENTS]
• Unsalted butter: 226g (8oz, 2 US sticks)
• Powdered sugar: 180g (6.3oz)
• Salt: 1/4 tsp
• Whole egg: 1
• Egg yolk: 1 (Save the egg white for egg wash)
• Cake flour: 350g (12.3oz)
• Almond flour: 70g (2.5oz)
• Colorings: Add as you like! (A link is below)
• Sprinkles: As your choice!
Egg wash:
• Egg white: 1
• Water: 30g (1oz)
Bake at 340F | 170C for about 10 mins
and turn the temperature down to 330F/165C and bake for another 10 mins or until the edge is slightly toasted.
*Adjust the time and temperature depending on the oven and the size of your cookies. (Today, it was about 2 inch/5cm)

Christmas Tree In a Pot
Makes 12 to 14 Christmas Trees
Ingredients:
Christmas Tree Sugar Cookies:
1/4 cup of unsalted butter, room temperature
½ cup of icing sugar
1 egg
1 cup of plain flour, plus more for rolling
1/4 tsp. of baking powder
1/8 tsp. of salt
½ tsp. of vanilla extract
¼ tsp. of cinnamon
Royal Icing:
1 egg white
1 ½ cups of icing sugar
½ tsp. of vanilla extract
1/8 tsp. of salt
Green, red, yellow food coloring
Pot Cookies:
1 ¼ cups of pain flour
½ cup of unsalted butter, room temperature
¼ cup of white sugar
¼ cup of light brown sugar
1 egg yolk
3 tbsp. of dark chocolate, chopped
1 tsp. of vanilla extract
¼ tsp. of cinnamon
1/8 tsp. of salt
¼ tsp. of baking soda
Decorations:
2 tbsp. of dark chocolate, melted
To make the Christmas tree cookies:
1. In a large bowl, whisk together plain flour, baking powder, salt and cinnamon. Set aside.
2. In a mixing bowl, lightly cream butter and icing sugar until light and pale.
3. Mix in one egg and vanilla extract.
4. Throw in flour mixture and mix on low speed until just combined. Transfer into a cling wrap and let it cool in the freezer for 20 minutes.
5. Dust your countertop with some flour, roll out your dough until half a centimeter thickness. Cut out shapes using a Christmas tree cutter that has been coated with flour. Re-roll if needed to repeat.
6. Transfer into a baking tray lined with baking paper. Let it set in the fridge while you preheat your oven to 180C or 160C-fanforced.
7. Bake it in the oven for 10 to 12 minutes.
8. Let it cool while you make your royal icing.
To make the royal icing:
9. Beat egg white, vanilla extract and salt together until frothy.
10. Gradually add in icing sugar while beating the mixture on high speed.
11. Beat on high speed for about 5 minutes until thick, glossy and stiff.
12. Divide the icing into 4 parts, 1 tablespoon for white, red and yellow icing respectively. While the rest for green.
13. Color them using food coloring. Wrap it with cling firm if you are not using any moment as it will dry out.
14. Transfer your royal icing into a piping bag individually. Pipe an outer layer of green icing for each Christmas tree. This is call outlining
15. Let the icing set for at least 5 minutes before filling it up with green icing that has been slightly diluted with some water for easy flooding.
16. After filling it up, let it set for at least an hour until the whole green icing has been set.
17. Decorate the cookies with the different color of icing to your liking. Let it set.
To make the Pot Cookies:
18. In a bowl, whisk together plain flour, cinnamon, salt, and baking soda. Preheat oven to 180C or 160C fan-forced.
19. In a mixing bowl, cream together butter and both sugars until light and fluffy.
20. Add in one egg yolk and vanilla extract.
21. Gradually mix in some flour mixture until combined. Fold in chopped dark chocolates.
22. Transfer tablespoonful worth of dough into mini cupcake pan.
23. Bake it in the oven for 8 to 10 minutes.
24. Once it’s out from the oven, immediately coat the end of every Christmas tree with melted chocolate and squash it into the center of every pot cookies.
25. Let it cool in the fridge and serve. Or wrap it up as a Christmas gift.
