I have truly been waiting to make this. Cheesecake Factory Linda’s Fudge Cake is my all-time favorite chocolate cake. It is rich, chocolatey, and slightly sweet. This recipe satisfies the craving for sure. Delicious!!

Here's the recipe:
INGREDIENTS:
Chocolate Fudge Cake
1 3/4 cups flour
2 cups sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup boiling water
Chocolate Ganache (recipe follows)
Chocolate sprinkles (optional) OR chopped toasted almonds OR pecans
INSTRUCTIONS:
1. In a large mixer bowl, mix together flour, sugar, cocoa, baking soda, baking powder and salt.
2. With an electric mixer on medium speed, beat in eggs, milk, oil and vanilla; beat 2 minutes on medium speed. On lowest speed (to avoid spattering), beat in boiling water (batter will be thin) until well blended.
3. Pour into 2 greased 9-inch round layer cake pans, dividing evenly.
4. Bake in preheated 350-degree oven about 30 to 33 minutes or until cakes test done. Cool in pans 15 to 20 minutes, then remove to racks to cool completely.
5. When cool, with a long-serrated knife, cut each layer in half horizontally. Spread a layer of Chocolate Ganache over bottom layer and over tops of 2 more cake layers and stack together on a large serving plate. Place remaining cake layer on top of cake stack. Frost top and sides of cake with Chocolate Ganache. Press chocolate sprinkles or nuts into ganache around sides of cake, if desired. Refrigerate cake until serving time. Makes 1 (9-inch) cake.
Chocolate Ganache
4 cups semisweet chocolate chips (2 (12-ounce) packages)
2 cups whipping cream
3 tablespoons butter, cut up
2 teaspoons vanilla
INSTRUCTIONS:
1. In a large microwave safe bowl or measure, combine chocolate chips and whipping cream.
2. Heat on high (100 percent) power in microwave oven 1 1/2 to 2 1/2 minutes. Remove from microwave, stirring until chocolate is melted and mixture is well blended. Add butter and vanilla stirring until butter is melted and mixture is well blended.
3. Cool in refrigerator, stirring occasionally, until of good spreading consistency to spread over cake layers. Use to fill and frost top and sides of a 4-layer 9-inch cake.

Makes one 9-inch cheesecake (10 servings)
INGREDIENTS
Chocolate Cheesecake
* 27 Oreo cookies (10 ½ oz/300 g), crushed
* 2 cups (12 oz/340 g) chopped bittersweet chocolate
* 3 cups (1 lb 8 oz/680 g) full-fat cream cheese, at room temperature
* 1 cup (8 oz/225 g) granulated sugar
* 3 large eggs, at room temperature
* 1 cup (8 oz/225 g) sour cream
* 2 teaspoons vanilla extract
Strawberry Compote
* Makes 2 cups (282 grams)
* 3 ½ cups (17 ½ oz/497 g) fresh strawberries, quartered
* ¼ cup (2 oz/ 57 g) granulated sugar
* 2 tablespoons water
* 2 teaspoons fresh lemon juice
INSTRUCTIONS
To make the cheesecake:
1. Preheat the oven to 350°F (180°C). Firmly press the crushed Oreos into an even layer over the bottom of a 9-inch springform pan. Set aside.
2. Place the chocolate in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until melted and smooth, then set aside to cool slightly. (Alternatively, melt the chocolate using a double boiler.)
3. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl using a handheld mixer, beat the cream cheese and sugar together until smooth. Pour in the melted chocolate and mix until combined.
4. Add the eggs one at a time, beating each until incorporated before adding the next. Add the sour cream and vanilla and mix until evenly combined.
5. Pour the batter over the Oreo crust and smooth the top.
6. Bake for 50 to 60 minutes, until the cheesecake looks firm yet still jiggles a little in the middle.
7. Remove from the oven and carefully run a knife or spatula around the inside edge of the pan to loosen the cheesecake (this helps prevent the surface from cracking as it cools). Let cool in the pan to room temperature, then cover and refrigerate for at least 4 hours or up to overnight.
8. When ready to serve, remove the springform ring, then slice and top with the whipped cream and strawberry compote. Store leftovers, covered, in the fridge for up to 3 days
To make the strawberry compote:
1. In a medium saucepan, combine the strawberries, sugar, water, and lemon juice and bring to a very gentle simmer over medium-low heat. Cook until the berries have softened and the liquid has thickened slightly, 4 to 5 minutes. Remove from the heat and let cool completely.
2. Once cooled, use straight away or store in an airtight container in the fridge for up to 4 days.

No-bake Chocolate Strawberry Cheesecake Recipe
This no-bake chocolate strawberry cheesecake is so beautiful, gentle and delicate. Flavors of dark chocolate, cheesecake and fresh strawberries. If you are a chocolate and strawberry lover, you’ll defiantly going to love this cake. This cheesecake recipe is perfect as a birthday cake, for Christmas, holidays or any other occasion.

Ingredients:
For the crust:
200g (7oz) Oreo cookies
1/3 cup (75g) butter, melted
For the filling:
2 cups (450g) Full fat Cream cheese, room temperature
9oz (250g) Dark chocolate
2/3 cup (160ml) Heavy cream
2/3 cup (83g) Powdered sugar
1 teaspoon Vanilla extract
1 teaspoon (2.5g) Cocoa powder
180g (6.5oz) 8-10 medium size Strawberries
8g Gelatin + 40ml water
For the ganache:
100g (3.5oz) Dark chocolate
1/2 cup (120ml) Heavy cream
Directions:
1. To make the crust: In a food processor or a Ziploc bag, crush Oreo cookies into fine crumbs. Add melted butter and pulse until combined. Press into bottom of 8-inch (20cm) springform pan. Refrigerate while making the filling.
2. In a small bowl stir gelatin powder and water. Let bloom for 10 minutes.
3. Chop the chocolate, melt in the microwave in 30 second pulses or over a double boiler.
4. In a large bowl beat cream cheese, powdered sugar and vanilla extract until smooth, add melted chocolate beat until smooth. Add heavy cream and whip for 3-4 minutes, until fluffy.
5. Melt the gelatin in the microwave for 15 seconds. Temper the gelatin: Gradually add few tablespoons of the cheesecake mixture into the dissolved gelatin and stir until combined. Pour back to the cheesecake mixture and mix until combined.
6. Cut the strawberries in half and arrange them around the edges of the pan. Try to use similar size strawberries. Pour the filling into the pan. Place in the freezer while making the topping.
7. Chop the chocolate, place in a large bowl. In a saucepan bring the heavy cream to a simmer. Pour over the chocolate. Let sit for 1-2 minutes. Stir until smooth. Pour over the cheesecake.
8. Refrigerate for at least 6 hours. Decorate with fresh strawberries.

Chocolate Cheesecake recipe ingredients :
biscuits 300g
cocoa powder 1/4 cup
melted butter 1/2 cup
sugar 1 cup
vanilla powder 1/2 tbsp
pinch of salt
cocoa powder 2 tbsp
cream cheese 350g
sour cream 100g
3 eggs
melted chocolate 200g

baking time : preheated oven 170c & bake for 50 to 55 minutes

5-Minute Microwave Cheesecake
Servings: 1
INGREDIENTS
1 tablespoon butter
2 graham cracker sheets
4 ounces cream cheese, softened
2 tablespoons sugar
3-4 drops vanilla extract
Raspberries, to serve
PREPARATION
1. Melt the butter in a small microwaveable mug or dish. Grease a ramekin with the melted butter.
2. Crush the graham crackers into fine crumbs, then mix it with the remaining butter. With a spoon, press the crust flat against the sides of the dish.
3. In a small bowl, combine the cream cheese, sugar, and vanilla, stirring until there are no lumps. Transfer the mixture on top of the cracker crust, then spread it evenly on top.
4. Microwave for at least 4 minutes, 30-45 seconds at a time at 50% power. Make sure the cheesecake does not bubble over the sides.
5. Chill in the freezer for at least 30 minutes, until it is completely cool to the touch.
6. With a knife, loosen the edges of the cheesecake then invert onto a plate, or eat straight from the dish.
7. Top with a few raspberries, and enjoy!
