These luscious cookies are indeed a dream, made with cocoa, two types of chocolate chips, oatmeal and nuts! In honor of National Chocolate Chip Day, I present you with this delicious cookie.
This recipe was sent to me by Eric (AmethystMoon) when I asked for yummy cookie recipes. I sent her a Cooking&Crafting T-shirt for doing so!
Cranberry Cheesecake Cookies:
DREAM COOKIES
1/2 C shortening
1/2 C butter (softened)
3/4 C sugar (white)
3/4 C brown sugar (packed)
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 eggs
1 tsp vanilla
1 & 1/3 C All Purpose flour
1/3 C unsweetened cocoa powder
2 & 1/2 C rolled oats
1 C semisweet chocolate chips
1 C white chocolate chips
1 C macadamia nuts (chopped)
Preheat oven to 350°F. Put a silicone mat on a cookie sheet
In a large mixing bowl cream together shortening and butter on high. Add in your white sugar, brown sugar, baking powder, baking soda, and salt. Beat until combined (scraping bowl, f course). Then add in your eggs, and vanilla until combined. Then goes in your flour and cocoa powder. Stir in oats, chocolate pieces, white chocolate pieces & nuts.
Drop dough with a 2in cookie scoop; 3 inches apart. Flatten a bit. They should look about 3 inches in diameter.
Bake 12-14 minutes or just until set. (I have a hot oven and mine only stays in about 10 min)
Let cool and enjoy. They are soooooo yummy. I make them around the holidays but there good any time of the year :)

Today I made WHITE CHOCOLATE MUD CAKE and took it waaayyy over the top with some seriously delicious and utterly simple decoration techniques. Enjoy!
Ingredients:
2 sticks plus 5 tablespoons (10.5 ounces) salted butter
1 cup water
10.5 ounces white chocolate, chopped or broken
3 ⅔ cups (450g) all-purpose flour
2 cups (400g) superfine sugar
3 ½ teaspoons baking powder
4 extra large eggs, lightly beaten (room temperature is best)
2 tablespoons plus 1 teaspoon vegetable oil
2 teaspoons vanilla extract (or the seeds from 1 vanilla bean pod)
Whipped white chocolate ganache

Chocolate Lovers Dream - BEST Chocolate Muffins Recipe!
Today I will share with you the best chocolate muffin recipe! It is a chocolate lovers dream, and one that my family craves! Below is my edited version of the recipe, but I will also include the original where I learned this. I've adapted mine for more moisture, but Ill give you both recipes for reference!
My Version:
Ingredients:
2 large eggs
1 cup milk or buttermilk (I use milk with a teaspoon of lemon juice)
2 teaspoons vanilla extract
1¾ cups all-purpose flour
⅔ cup natural unsweetened cocoa powder,
1¼ cups brown sugar packed
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1cup semi-sweet, bittersweet, dark chocolate chips etc
1/2 cup of Oil
1) Preheat Oven to 425 degrees
2) Mix flour, brown sugar, cocoa powder, baking soda, baking powder, salt, and 3/4 chocolate chips into bowl.
3) In a separate bowl beat eggs, milk, vanilla, and oil together.
4) Mix dry and wet ingredients until just combined.
5) Evenly distribute the batter into 12 regular sized muffins in you muffin tin.
6) Sprinkle the remaining 1/4 cup of chocolate chips onto the top of the muffins.
7) Place muffins into the oven at 425 degrees for 5 minutes.
8) After 5 minutes, lower temperature to 350 degrees and continue to bake for 11 more minutes.
9) Remove from oven when a toothpick inserted comes out clean. DO NOT let the chocolate chips fool you into thinking the batter is wet inside. Poke around to make sure that they are baked through. We do not want you to have a dry muffin!
10) Remove from oven and allow to cool for a few minutes in the muffin tin.
11) Enjoy!!
