Ingredients for Khajoor Roll / Dates Roll:
Dates / Khajoor (Pitted & Crushed) - 400g
Clarified Butter / Ghee - 2 Tbsp
Pistachios (Roughly Crushed) - 30g
Pumpkin Seeds - 30g
Almonds (Roughly Crushed) - 50g
Peanuts (Roughly Crushed) - 50g
Walnuts (Roughly Crushed) - 50g
Poppy Seeds - 1.5 Tbsp
Salt (Optional) - 1 Pinch

Chocolate Yule Log Recipe
It doesn't have to be Christmas to enjoy some of the yuletide fare, and that's certainly the case for the Consuming Passions Yule Log, a great confection courtesy of a great British cook and food author, Josceline Dimbleby. It's a fabulous jammy treat rich with chocolate and nut flavours.
Serves 6-8
Ingredients:
5 large eggs,
separated into yolks and whites
150g caster sugar
75g finely ground nuts
(I prefer a mixture of
roasted hazelnuts and macadamias)
1 1/2 tsp baking powder
2 rounded tbsp dark cocoa powder
2 or 3 tbsp warm water
1/4 tsp cream of tartar
Icing sugar for sifting
Apricot (or other) jam
300ml whipped cream
Method:
In a large bowl, whisk the five egg yolks with the caster sugar until the sugar has dissolved.
Stir in ground nuts, baking powder and cocoa.
Add a little warm water to soften the mixture.
In another large bowl whisk the egg whites with the cream of tartar until stiff peaks are formed. Gently fold whites into the yolk and nut mixture, taking care not to be too vigorous, or the air bubbles in the whites will collapse.
Pour into a rectangular baking tin (35cm x 25cm) lined with greased non-stick baking paper.
Bake in oven at 180C for around 25 to 30 minutes, until it's springy to the touch in the centre.
When cool, cover with non-stick baking paper and a tea towel and put in the refrigerator for a couple of hours to chill. When it comes out you'll notice it has shrunk a little. That's perfectly normal. Loosen the edges with a knife and turn out onto a sheet of baking paper sprinkled with icing sugar.
Spread on jam then a covering of whipped cream.
Carefully roll up, loosely, using the baking paper to assist in the rolling.
(Don't worry about cracks appearing. After all, logs do look a bit rough don't they?)
Transfer to a serving dish. Sprinkle with icing sugar.
Leftover potential: Keeps several days in the refrigerator.
Yule log may be served at Christmas or whenever you want a little indulgence.
Perfect served with a sparkling red wine.

Makes 16 brownies
5 Syns per brownie
2 large brown-skinned sweet
potatoes (about 500g), peeled and diced
100g porridge oats
3 level tbsp sweetener
1 medium egg
12 dried medjool dates, stoned and roughly chopped
2 level tbsp low-fat spread
6 level tbsp cocoa powder (or raw cacao powder, available in larger supermarkets)
16 raspberries
1 level tsp icing sugar, to dust
Preheat your oven to 180°C/fan 160°C/gas 4 and line the base and sides of an 18cm square loose-bottomed cake tin with non-stick baking paper.
Microwave or steam the sweet potatoes for 10 minutes or until tender (use a steamer or put them in a covered colander placed over a saucepan of boiling water and steam over a high heat). Leave to cool slightly.
Put the oats into a food processor and blitz until you have fine crumbs. Add the sweetener, egg, dates, spread, cocoa powder, cooked sweet potatoes and a pinch of salt, and whizz to a thick, smooth paste. Pour into the prepared tin, level the surface and carefully poke in the raspberries (placing them so that each brownie will get 1 raspberry). Bake for 35 minutes then leave to cool in the tin.
Turn out on to a board then peel away and discard the baking paper.
Cut into 16 squares and dust with the icing sugar to serve.

Ingredients For Peanut Date Roll
☛ 1 cup roasted peanuts, I am using salted
☛ 17-18 soft dates
☛ 3-4 tablespoons toasted sesame seeds
☛ 200 grams melted dark chocolate
☛ 1-2 tablespoons edible dried rose petals, crushed
How to Make Peanut Date Roll
1. I am using roasted salted peanuts, but you can also use raw peanuts. Just dry roast them in a heavy-bottomed pan/microwave/oven/air-fryer until toasty before using.
2. Add peanuts to a blender, or food processor and pulse until finely crushed. Remove the pits, add about 10 dates and blend again. Now, check the consistency and add the 7-8 dates (or as needed) to get a smooth dough. I used about 18 dates altogether. Blend again until it comes together like a soft and smooth dough. The reason to add dates in two portions is that sometimes dates are too soft and sticky. Thus, the dough turns out sticky and hard to roll if we add more than the required amount. TIP: At this point, you can also add cardamom or cinnamon powder.
3. Transfer the dough to a rolling surface and shape it into a log. Sprinkle toasted sesame seeds on the working surface and roll the log on it to coat evenly well with seeds.
4. Now, leave about 1 cm from the edges and start pressing the center using a back of a wooden spoon/chopstick to get a canal shape. It should be about 1/2 cm deep. Check the video for clear instructions.
5. Wrap it in parchment paper or a cling wrap, and chill for 1 hour or until firm. Once chilled, remove the log from the refrigerator. Fill the canal with melted dark or milk chocolate. Smoothen the top with a knife and sprinkle with crushed edible dried rose petals. Chill it again for about 30 minutes, or until the chocolate is firm.
6. Using a sharp knife, cut the log into about 1 cm thick slices. The peanut date roll is ready, serve it chilled. Keep the log in the refrigerator.
