Why you should use BUTTERMILK for baking and how to make it yourself at home!

Buttermilk is one of my favourite ingredients to use when it comes to baking! I use it in so many of my recipes, including my soft vanilla cake and red velvet cake. If you’re in a pinch and don’t have buttermilk on hand, or can’t easily access it, you can make a great buttermilk substitute right at home.

- 1 tbsp (15 ml) white vinegar - lemon juice okay too

How to Make Buttermilk
1 Cup of Regular Whole Milk
1 1/2 Tbsp of Lemon Juice
Let it set for 10 minutes
The Milk will Curdle and Thicken
I use Buttermilk in alot of my Baked Goods Because it gives your Cakes and Cupcakes a Softer Texture!????
Chocolate Buttermilk Cake
Ingredients
1/2 Cup of Vegetable Oil
2 Cups Sugar
2 Large Eggs
2 Tsp of Pure Vanilla Extract
1 Cup of Buttermilk
1 Cup Hot Coffee or Hot Water
1 3/4 cup of All Purpose Flour
1 1/2 Tsp of Baking Powder
1 1/2 Tsp of Baking Soda
1 Tsp of Salt
3/4 Cup of Hershey's Chocolate Cocoa Powder
Whipped Buttercream Frosting
2 Cups of Softened Unsalted Butter
4 Cups of Powdered Sugar
1 Tsp of Pure Vanilla Extract
1 Tbsp of Heavy Whipping Cream
1/2 Cup Cocoa Powder
1/3 Cup of Melted Chocolate
*For the Melted Chocolate
*Its Best to Use Baking Chocolate with a Tbsp of Unsalted Butter

Chocolate Buttermilk Cake | Emeril Lagasse
A rich and delicious cake made even better with Emeril’s decadent pecan caramel topping and a scoop (or two) of vanilla ice cream. This cake DOES NOT disappoint!
CHOCOLATE BUTTERMILK CAKE
SERVES 8
CAKE
12 tablespoons (1 1/2 sticks) unsalted butter, softened, plus more for pan
3/4 cup unsweetened cocoa powder, plus more for pan
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup plus 2 tablespoons buttermilk
2 tablespoons molasses
1 teaspoon pure vanilla extract
1 3/4 cups packed light-brown sugar
2 large eggs
1 cup pecan halves
1 cup dark-brown sugar
1 cup water
2 tablespoons bourbon
2 tablespoons heavy cream
Vanilla ice cream, for serving
Thinly sliced pears, for serving (optional)
Preheat oven to 350 degrees. Butter and lightly coat an 8-cup loaf pan with cocoa; set aside.
Into a large bowl, sift together flour, cocoa, baking soda and salt; set aside. In a small bowl, whisk together buttermilk, molasses, and vanilla; set aside.
In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar, beating about 3 minutes. Add eggs, one at a time, beating well after each addition.
Add one-third of the wet and one-third of the dry ingredients and mix until just combined. Repeat process with remaining ingredients. Be careful not to overwork.
Transfer batter to prepared pan and bake until the cake is just set, and a tester inserted into the center comes out clean, 50 to 55 minutes. If cake gets too brown, tent it with foil.
Let cake cool in pan 40 minutes, before turning out onto a wire rack to cool completely.
In a small saucepan, combine pecans, dark-brown sugar, water, and bourbon and simmer, stirring frequently until thick. Add cream and stir to combine.
Slice cake and serve topped with ice cream, pecan caramel, and pears, if desired.
