2 1/4 c FLOUR
1 c brOWN SUGAR
3/4 c GRANULATED SUGAR
2 ts CINNAMON
1/2 ts SALT
1/4 ts GINGER
3/4 c VEGETABLE OIL
1 c CHOPPED WALNUTS OR PECANS
1 t BAKING POWDER
1 t BAKING SODA
1 c BUTTERMILK
1 ea LARGE EGG
PREHEAT OVEN TO 350 DEG F. LIGHTLY GREASE A 9" X 13" PAN. MIX FLOUR, SUGARS, 1 ts SPOON CINNAMON, SALT AND GINGER. STIR IN OIL UNTIL MIXTURE IS CRUMBLY AND EVENLY MOISTENED. FOR CAKE TOPPING, PUT 3/4 CUP FLOUR MIXTURE INTO A SMALL BOWL. STIR IN NUTS AND REMAINING CINNAMON. STIR BAKING POWDER AND SODA INTO REMAINING MIXTURE. BEAT BUTTERMILK AND EGG TO BLEND. ADD TO FLOUR MIX, STIRRING UNTIL BATTER JUST FORMS. POUR MIXTURE INTO PREPARED PAN. SPRINKLE TOPPING OVER PAN EVENLY. BAKE AT 350 DEG F. FOR 40 TO 45 MINUTES OR UNTIL PICK INSERTED IN THE CENTER COMES OUT CLEAN. COOL COMPLETELY, IN THE PAN, ON A WIRE RACK. MAKES 12 SERVINGS. PER SERVING: 398 CALORIES, 4 g PROTEIN, 51 g CARBO, 21 g FAT, 19 mg CHOL, 228 mg SODIUM. EACH SERVING 47.8 % CALORIES

Let's Bake a Buttermilk Coffee Cake
Norann demonstrates baking a family favorite, Buttermilk Coffee Cake. Here's the recipe:
Combine and mix well:
2 ¼ cups flour
½ tsp salt
½ tsp cinnamon
1 cup brown sugar
¾ cup oil
Remove ¾ cup of the above mixture, place in separate bowl, and stir in 1 tsp cinnamon. Reserve this for the crumble.
Into the remaining mixture, add:
1 tsp baking soda
1 tsp baking power
1 egg
1 cup buttermilk (full cream milk plus 1 Tbsp vinegar – fine to let stand until curdled, but not nec.)
Blend until smooth – use a whisk, or an electric beater/mixer.
Pour batter into greased pan. A rectangular pan works well.
Sprinkle the crumble on top of the batter.
Preheat oven to 180C / 350F and bake until done (approx. 20-25 mins). Cake should be lightly brown and spring back at a gentle touch when done.
Serving suggestion: warm with sour cream or yogurt, or butter. Excellent breakfast treat. Enjoy!

2 cups flour
1 cup packed brown sugar
3/4 cup white sugar
1/2 tsp salt
1 tsp nutmeg
3 /4 cup vegetable oil....mix
reserve 1/2 cup mixture add 1 tsp cinnamon
add 1 cup buttermilk
2 tsp baking powder
1 tsp baking soda
2 eggs
350 degree oven bake 25 to 35 minutes
HOW TO MAKE: Classic, Cinnamon Coffee Cake
Wake up to the sweet smell of fresh buttermilk coffee cake! This family recipe is quick and easy to make.
Here is what you’ll need:
Cake:
1½ cups all-purpose flour
2 Tbsp SACO Cultured Buttermilk Blend
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
¾ cup granulated sugar
¼ cup solid vegetable shortening
1 egg
¾ cup water
Topping:
⅓ cup brown sugar
½ tsp cinnamon
3 Tbsp butter or margarine, softened
¼ cup all-purpose flour
Preheat oven to 350°F. Grease one 9-inch square cake pan. Place all ingredients in large mixing bowl. Beat on low speed 30 seconds. Scrape bowl then beat, on medium speed, an additional 1½ minutes, scraping bowl occasionally. Do not over beat. Spread half the batter into prepared pan and sprinkle with half the topping. Top with remaining batter; sprinkle with remaining topping. Bake 30 to 35 minutes, or until wooden toothpick tests done. In the meantime, in small mixing bowl cut all ingredients together until well-blended. Sprinkle between layers of batter and over top of cake as directed. Serving size: 16.

Cinnamon Coffee Cake
No act of love, however small, is ever wasted.
Easy cooking for busy families
3 cups all purpose flour
¼ teaspoon salt
1 cup sugar
4 teaspoons baking powder
1-1/2 cups milk
2 eggs
2 teaspoons vanilla
½ cup butter, melted
Topping:
1 cup butter, softened
1 cup brown sugar
1 Tablespoons flour
1 Tablespoon cinnamon
1/2 cup chopped nuts - optional
1/3 of an 8 oz. brick of cream cheese (optional)
Cake -- Mix everything together except for the butter. Slowly stir in the melted butter and pour into a greased 9x13 baking pan.
Topping -- Mix all the ingredients together until well combined. Drop evenly over the batter and swirl with a knife. Bake in a preheated 350° oven for 30 minutes.
Glaze
2 cups powdered sugar
5 Tablespoons milk
1 teaspoon vanilla
Whisk glaze ingredients together until smooth. While cake is warm, drizzle the glaze over the cake.
