How To make Chipotle Salsa
30 ea Dried chipotle chiles OR;
-3 c chipotle chiles. 8 ea Ripe Roma tomatoes, cored
12 ea Garlic cloves, peeled
2 tb Salt
1/2 ts Black pepper, freshly ground
Combine all of the ingredients in a medium saucepan. Bring to a boil, reduce to a simmer and cook, uncovered, about 20 minutes. The liquid should be reduced by one-third and the tomato skins should be falling off. Set aside to cool. Pour the mixture into a blender or a food processor fitted with the metal blade. Puree until smooth and then pass through a strainer. Serve chilled. Chipotle salsa can be stored in the refrigerator up to 5 days or frozen. Hey everyone! This is about as close as you can get to the real thing! I have put together a recipe based upon their list of ingredients that mimics the recipe as close as possible that you wont be able to taste a difference! Let me know of anything else you would like to see!
Recipe:
Tomatillos: 1.1 Lbs
Vine Tomatoes: 2 or 7 Ozs
Garlic Cloves: 2
Diced Jalapenos: 1 Tablespoon
Diced Red Onion: 3 Tablespoons
Diced Cilantro: 3 Tablespoons
Kosher Salt: 1-2 Teaspoons to taste
Citrus Juice: 1/2 Teaspoon of lime juice and lemon juice
Cumin: 1 Teaspoon
NOTE*
Make sure to broil the tomatillos, tomatoes, and garlic for 12 minutes total, 6 minutes each side.
Make sure to blend until well combined, however long this takes on high with a food processor or blender.

easy and yummy chipotle salsa
recipe:
2 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
1 garlic clove
2 chipotle peppers from can - adobo sauce can
1 small onion roughly chopped
1/2 cup cilantro
1 can (28 ounce) whole tomatoes drained
put everything in a blender
blend until desired conssistency!
enjoy with tortilla chips!
